Buttermilk
Description
Buttermilk is a slightly sour, refreshing dairy drink with a creamy, somewhat watery consistency and a snow-white color; its taste is pleasantly fresh, with a delicate hint of creaminess resulting from fermentation. It contains protein, calcium, B vitamins, and beneficial probiotic bacteria, with relatively low fat and calorie content, which aids digestion, calcium absorption, and overall gut microbiota balance. In the kitchen, buttermilk is great for baking (pancakes, sponge cakes, rolls), as a base for sauces, dressings, and cold soups, as well as for marinades that tenderize meat; it gives dishes a slightly tangy flavor and fluffiness. It should be stored in the refrigerator at around 4°C in a tightly sealed container, to be used within a few days after opening; it may separate — just mix it, and freezing changes its texture.
