Preparation steps
Heat the milk: option A – in the microwave: pour 200 ml of milk into a microwave-safe container and heat for 60–90 seconds at 700–800 W, until the milk is steaming and warm (about 60–70°C), but not boiling. Option B – on the stove: heat in a small pot over medium heat, stirring, until the first bubbles appear at the edges (do not let it boil).
Pour 80 g of oats into a large bowl. Do this evenly, shaking the spoon to avoid clumps. If you are using instant oats, the consistency will be softer; rolled oats require a longer soaking time.
Pour hot (but not boiling) milk into a bowl with the flakes. Stir vigorously with a spoon for 10–15 seconds to coat all the flakes with milk. Cover the bowl with a plate or lid and set aside for 4–5 minutes until the flakes swell and become creamy. Check the consistency: the flakes should be soft but not soggy.
In the meantime, peel the banana and slice it into pieces about 5 mm thick on a cutting board. Alternatively, mash half of the banana with a fork if you want a more banana flavor and creamy texture.
Uncover the bowl, if the consistency is ready (soft, creamy), add 15 g of honey and 2 g of cinnamon (if using). Mix with a spoon for 10–20 seconds to evenly distribute the honey. Taste and add a little more honey if you want a sweeter version.
Arrange the banana slices on top and sprinkle with 30 g of walnuts. If you like, lightly toast the walnuts in a dry pan for 1–2 minutes over medium heat, until they start to smell and lightly brown (be careful, they can burn quickly). Serve immediately.
Serve the flakes in a deep bowl, drizzled with an extra drop of honey. You can also add a spoonful of natural yogurt or kefir to enhance the creaminess. Enjoy!
