Description

Shaped as Halloween appetizers "Monster Eyes" are a fun and impressive snack made from large green olives and slices of yellow cheese, finished with paprika oil creating "bloody" veins. The idea combines simplicity and theatrical effect — it works well as a snack for both kids and adults, pairing perfectly with bread, crackers, or a platter of cold meats. The dish uses seasonal Polish ingredients (optional parsley as "moss" on the plate) and is quick to prepare: you can make the decorative eyes a few hours before serving. Visually, we get a white field of yellow cheese, light green/dark green spots of olives, and a reddish sheen of paprika oil — the effect is frightfully appetizing.

Preparation steps

Preparation

1

Prepare your workspace: wipe the countertop with a dry cloth, get a cutting board, a sharp knife, a small bowl, a strainer, and paper towels ready. Open the jar of olives and pour them into the strainer, set aside for 2-3 minutes to drain the brine. Then spread the olives on paper towels and gently dry them by placing another towel on top for 30-60 seconds.

Ingredients: green olive
Use a strainer to drain and paper towels to dry; the olives must be relatively dry, otherwise the paprika oil won't adhere and the decoration will blur.
2

If the olives have pits: remove the pits one by one using a knife and a small spoon or use an olive pitter. Hold the olive in your left hand (if you are right-handed), gently peel back the skin and pull out the pit; be careful not to press too hard so the olive doesn't break apart. If you have already pitted olives, move on.

Ingredients: green olive
The best are large, already pitted olives; if you have to pit them by hand, work over a bowl to catch the juices and avoid dirtying the countertop.
3

Prepare the cheese circles: cut the cheese into slices about 3 mm thick. If you want perfectly even circles, use a metal bottle cap with a diameter of 20-25 mm as a cutter: place the cap on the slice and press down firmly to cut out a circle. You will need as many circles as you have olives (about 12). Preparation time: 8-12 minutes.

Ingredients: Cheese
Use a sharp knife and a stable cutting board; if you don't have a cutter, slice the cheese and cut out circles freehand with a knife. Cutting thinly will make the cheese round look like the white part of an eye.

Sauce and coloring

4

In a small bowl, mix the rapeseed oil with sweet paprika, pepper, and a pinch of salt: add the paprika, then the pepper and salt, pour in the oil, and mix vigorously with a teaspoon for 15-20 seconds. To enhance the aroma and deepen the color: heat the mixture in a small saucepan for 10-15 seconds over very low heat or in the microwave for 10 seconds — the oil should be warm, not hot. After heating, mix again and set aside to cool to a lukewarm temperature.

Ingredients: Rapeseed oil, sweet paprika, Black pepper, Salt
Use a small saucepan or a microwave-safe glass bowl; if the oil starts to smoke, immediately remove it from the heat — the paprika burns quickly. The oil should be warm so it doesn't melt the cheese during decoration.

Assembly

5

On a plate, place a slice of yellow cheese — this will be the 'protein' of the eye. In the center, place one green olive (with the seam facing up), so that the piece of cheese is visible around the olive. Insert a toothpick vertically through the center of the olive and cheese (about 2/3 of the length of the toothpick) — this will secure the structure and make it easier to transport. Repeat this process for all the olives. Assembly time: 8-12 minutes.

Ingredients: Cheese, green olive, toothpick
If the olive is very wet, dry it just before assembly; inserting a toothpick horizontally will twist the eye, so insert it straight (vertically).
6

If you are using black olives as 'pupils': cut the black olive in half and place one half on top of the green olive (on the side you want to have the 'pupil'); press lightly. When you are not using a black olive, you can leave the natural indented center of the green olive as the pupil.

Ingredients: black olive, green olive
Cut the halves of black olives with a sharp knife and use tweezers or the end of a toothpick for precise placement; this detail gives a realistic expression.

Decoration

7

To create 'bloody' veins: dip the end of a toothpick into some paprika oil and make a few short strokes from the edge of the olive outward, creating thin lines. You can also drizzle the oil with a small spoon in spots and drag the toothpick to achieve the effect of spreading veins. Finally, gently sprinkle the plate with finely chopped parsley as 'moss' and, if you want extra heat, lightly sprinkle with chili flakes (optional).

Ingredients: Rapeseed oil, sweet paprika, Parsley
Work gently: a few thin strokes are better than one thick blot. The oil should be lukewarm or at room temperature — cold oil will behave like drops, while very warm oil may melt the cheese.

Serving

8

Arrange the finished 'eyes' on a black plate or cheese board (the contrast enhances the effect), decorating with the remaining parsley and possibly a few drops of oil beside it. Serve chilled, but not straight from the fridge — 5-10 minutes at room temperature will bring out the aromas.

Ingredients: Parsley, green olive
Use a dark plate (e.g. black stoneware or a board made of dark wood) for a better Halloween effect; serve with bread or crackers on the side.

Fun Fact

💡

Snack foods that resemble eyes have a long tradition in party cuisine — the simplicity of olives and cheese makes it easy to achieve a realistic effect without complicated preparation. Bell pepper (especially in Spanish cuisine) is often used to color fats, which is utilized here to create the "blood."

Tips

🍽️ Serving

Serve on a dark plate or board; arrange the eyes in groups of 6-8, placing crackers and slices of dark bread next to them. Before serving, take out of the fridge for 5-10 minutes so that the oil and cheese reach a pleasant temperature. Additionally, you can add a few slices of pickled cucumber or thin strips of red pepper to enhance the color effect.

🥡 Storage

Store in the refrigerator in an airtight container for a maximum of 48 hours — olives release juice, which can change the consistency of the cheese and decorations. Do not freeze. To refresh before serving, drain excess juices with a paper towel and let sit for 10 minutes at room temperature.
