Description
Parsley is a fresh, intensely green herb with delicate, flat or curly leaves and an aroma that combines notes of grass, citrus, and a hint of spiciness; the flavor is fresh, slightly peppery, and refreshing, adding clarity to dishes without overwhelming them. As a rich source of vitamins C, K, and A, as well as folic acid, iron, and antioxidants, it supports immunity, bone health, circulation, and digestion, and due to its natural essential oils, it has a mild diuretic effect and refreshes breath. Parsley is versatile in the kitchen — it is perfect as a base for herbs, a sprinkle for soups, salads, sauces, pesto, marinades, fish and meat dishes, as well as for purees and roasted vegetables, especially when paired with lemon and garlic. To preserve its aroma and freshness, store it unwashed wrapped in a damp paper towel in a closed container in the refrigerator or in a glass of water like a bouquet; finely chopped parsley can also be frozen in oil or ice cubes.
