Preparing the fruits

If you are using fresh raspberries: place the raspberries in a fine-mesh sieve. Rinse very briefly under cold, gentle running water (5–8 seconds), shaking the sieve to remove any debris. If you are using frozen raspberries, do not fully thaw them — you can add them directly to the blender, which will cool the smoothie and give it a thicker consistency.

Use a sieve and a bowl underneath. Raspberries are delicate and can easily break apart; do not soak them for too long, as they will lose their flavor. If the raspberries are very dirty, check them individually and remove any woody stems.

Preparing the base

In a large measuring cup or bowl, measure out natural yogurt and pour it into the blender. Add 120 ml of milk — the milk adds fluidity; if you want a very thick smoothie, add less milk (60 ml). If the yogurt is very thick and hard to mix, whisk it with a spoon before adding the raspberries.

Use a measuring cup or spoon. If you don't have a countertop blender, you can use an immersion blender in a tall container. Adjust the thickness with small amounts of milk — it's better to add too little and then add more than to thin it out too much right away.

If you want to sweeten the smoothie, add one tablespoon of honey (15 g). To increase the nutritional value and thicken the drink, add two tablespoons of oats (30 g). You can also add half a teaspoon of lemon juice for a fresher acidity — remember that lemon is optional and changes the flavor profile.

If you want a vegan version, use maple syrup instead of honey. It's better to briefly grind the oats in a blender if you don't like their texture.

Blending

Place the raspberries in the blender, add the previously prepared mixture of yogurt and milk, along with any optional additions. Cover the blender with the lid and blend on high speed for 25–45 seconds, until everything is smooth and uniform. During blending, stop the blender after 15–20 seconds, scrape the mixture from the walls of the jar with a spatula, and continue blending to avoid lumps of oats.

Use a jug blender (best results) or an immersion blender in a tall container. If you prefer small pieces of fruit, blend for a shorter time. If the blender is not very powerful, you can first blend the flakes, then add the rest of the ingredients.

Seasoning and adjusting consistency

Taste the smoothie with a spoon. If it is too sour, add another half tablespoon (7–8 g) of honey and mix. If it is too thick, add 15–30 ml of milk and mix again with a short pulse. If you want a more pronounced flavor, add a bit of lemon zest (grated) or half a teaspoon of lemon juice.

Season gradually — it's easier to add than to take away. The flavor should be balanced: raspberry acidity with the mild sweetness of yogurt and honey.

Serving

Pour the smoothie into two tall glasses (about 300–350 ml each). If you used oats, you can sprinkle a little bit of whole oats on top or place 2–3 whole raspberries as a decoration. Serve immediately, preferably chilled.

The best are chilled glasses (put them in the fridge for 5–10 minutes before pouring). Use reusable straws or bar spoons for mixing. Additionally, you can add an ice cube if the smoothie was not made with frozen raspberries.

Cleaning

After preparing the smoothie, immediately rinse the blender with cold water, then wash it with warm water and dish soap. This will remove any fruit residues and prevent difficult-to-remove stains.

If the blender has metal blades, be careful when washing. For quick cleaning, pour warm water with a drop of dish soap into the blender, close it, and turn it on for a few seconds, then rinse.

It is best to consume the smoothie immediately. If you want to store it, pour it into an airtight jar and keep it in the fridge for up to 24 hours; before consuming, shake or stir vigorously — separation of the liquid is natural. Freezing with yogurt is not recommended, as the texture may change.
