Wash the radishes under cold water, trim the leaves and ends. Place the radishes on a cutting board and slice them into thin rounds or small cubes (thickness of the slices about 2-3 mm). This cutting method will ensure crunchiness in the cottage cheese.
Description
A classic, quick, and very Polish cottage cheese spread with chives and radishes — a light paste for breakfast, dinner, or as a side for grilled dishes. The base is fresh cottage cheese, combined with thick sour cream, crunchy radishes, and aromatic chives. The dish has a fresh taste, slightly spicy from the radishes and green from the herbs, perfectly served with dark bread or rustic rolls. Preparation takes just a few minutes, the ingredients are easily available in Polish stores, and the consistency and seasoning can be easily adjusted to personal preferences.

Preparation steps
Wash the chives, dry them with a paper towel, and chop them very finely (into strips about 5 mm long). The fine cutting allows the chives to evenly distribute their flavor in the cottage cheese.
Place the cottage cheese in a large bowl. Crumble the cottage cheese with a fork or potato masher until there are no large lumps visible and the mixture becomes smooth and creamy.
Add the cream to the cottage cheese with a spoon — first half of the portion, mix vigorously with a fork and check the consistency. If the mixture is too thick, add the rest of the cream. Season with salt and pepper, gently mixing until you achieve a creamy but not runny consistency.
Add the chopped radish and chopped chives to the mixture. Gently stir with a spoon to evenly distribute the vegetables in the cottage cheese. Taste and season with an additional pinch of salt or pepper if needed.
Transfer the cottage cheese to a small bowl or onto a board. Serve immediately with dark bread, country bread, or as a side dish with young potatoes. If preparing in advance, chill in the refrigerator before serving (about 30 minutes).
Fun Fact
Cottage cheese is one of the oldest forms of dairy products in Polish cuisine; it was common in villages as a quick source of protein and an addition to bread even before the spread of aged cheese.

Tips
Serve chilled with rye bread, dark rolls, or as a side to young potatoes with dill. For a bolder flavor, you can serve pickled cucumbers or slices of radish alongside. For a party, spread the cheese in bowls and prepare a platter with bread and vegetables next to it.
Store in a closed container in the refrigerator for up to 2 days. Before serving, take it out for 10-15 minutes so it is not too cold. Do not freeze the cottage cheese — once thawed, it loses its structure and becomes watery.
