Description

Halloween snack resembling witch's fingers: pieces of sausage wrapped in thin strips of puff pastry, with an almond as the nail and a 'bloody' dip. The dish combines crispy pastry, juicy sausage, and a pleasantly sweet-spicy dip, creating a striking, slightly grotesque appetizer perfect for a party. Inspiration: simple Polish ingredients and playful shapes — appealing even for those trying puff pastry for the first time. Serve hot on a tray lined with baking paper; pairs well with mustard or ketchup with a hint of hot pepper.

Preparation steps

Preparation of ingredients

1

Take the puff pastry out of the fridge 10–15 minutes beforehand so it is not too hard (it should be chilled but flexible). Preheat the oven to 200°C (without fan) or 180°C (with fan). Prepare a baking tray lined with parchment paper.

Ingredients: Puff pastry
Use a large cutting board and a sharp knife. Chilled dough is easier to cut than frozen. Preheat the oven so that the fingers bake evenly.
2

Cut the sausage into pieces 6–7 cm long — each piece is one 'finger'. If you are using thicker sausage, cut it in half lengthwise so that the finger is not too bulky. Drain any excess fat with a paper towel.

Ingredients: Sausage
Use a knife with a minimum length of 20 cm to cut even pieces. If the sausage is greasy, dry it off, as the dough may become soft.

Shaping the fingers

3

Roll out the puff pastry and cut it into thin strips about 1.5–2 cm wide. Each strip will be spirally wrapped around a piece of sausage — leave some space at one end to insert an almond.

Ingredients: Puff pastry
Use a ruler or a measuring knife to ensure the strips are of equal width. If the dough sticks to the knife, lightly dust it with flour (but just a little).
4

Wrap each piece of sausage with one strip of dough, starting from the middle and moving towards one end — leave about 1 cm free at the end where you will insert the almond. Wrap loosely, not too tightly, so that the dough can gently expand while baking.

Ingredients: Sausage, Puff pastry
Use a board as a stable surface. Keep the strip of dough taut, but do not stretch it too much, as it will crack during baking.
5

At the tip of each 'finger', press a thin slice of almond so that it looks like a nail — arrange it slightly curved towards the tip. If the almond is too thick, trim it with a knife. Brush the exposed areas of the dough with beaten egg (use a brush).

Ingredients: almond, Puff pastry
Use a silicone brush. Gently press the almond with the tip of a knife to stick it to the dough. Additionally, you can add 1-2 almond flakes to the edges for a 'dirty nails' effect.

Baking

6

Arrange the prepared fingers on a baking sheet, leaving 2–3 cm between them. Very lightly sprinkle the top of each finger with smoked paprika (only on the edges) to achieve a smoky appearance. Bake in a preheated oven for 12–15 minutes, until the pastry is golden and crispy, and the almonds are lightly browned.

Ingredients: Smoked paprika
The best is a baking tray lined with parchment paper. Baking time depends on the oven — watch the color of the cake from the 10th minute. If the almonds are browning too quickly, cover them for a moment with a piece of aluminum foil.

Decoration and serving

7

Remove the fingers from the oven and let them rest for 2–3 minutes so they don't burn. Arrange them on a dark platter. Serve small bowls of mustard and ketchup alongside — you can lightly spread the ketchup on the plate to make it look like 'blood'. Optionally, sprinkle with freshly ground pepper.

Ingredients: Mustard, Ketchup, Black pepper
Use a dark platter or serving board — the contrast will enhance the effect. Additionally, you can arrange a fake spider web as a table decoration, but not directly on the food.

Serving and safety

8

Serve hot or warm. Warn guests that the inside is hot, especially if the sausage has just come out of the oven. Leftovers can be stored in the fridge and reheated in the oven for 5–7 minutes at 180°C to restore the crispiness of the pastry.

Ingredients: Sausage
Do not store at room temperature for long due to the meat inside. When reheating, avoid the microwave, as the pastry will lose its crispiness.

Fun Fact

💡

The idea of 'fingers' is an old recipe for party snacks that gained popularity as a Halloween element in the USA, but versions with sausage and puff pastry are popular in Poland as a quick, impressive snack.

Tips

🍽️ Serving

Serve on a dark platter with ketchup spread in the shape of 'blood' splatters. Dips to choose from: spicy mustard, honey mustard, ketchup with a hint of chili pepper. Add fresh herbs on the side (e.g. parsley) for a color contrast.

🥡 Storage

Store in the refrigerator in a closed container for up to 24 hours. To reheat and restore crispness, bake in a preheated oven at 180°C for 5–7 minutes. Reheating in the microwave is not recommended, as the dough will become rubbery.
