Description
Beef or game broth has a deep, meaty aroma; beef tends to be mildly sweet and rich, while game adds a wild, earthy intensity. In appearance, it is clear to amber-brown, and when cooled, it can become gelatinous due to the natural collagens from bones and connective tissue. Nutritionally, it provides easily absorbable amino acids (including glycine and proline), collagen, minerals such as iron and zinc, and electrolytes; when consumed in moderation, it supports joints, digestion, and tissue regeneration. In the kitchen, it serves as a base for soups, sauces, risottos, braises, and deglazing pans, enhancing the flavor of dishes without the need for additional fat. The broth should be cooled quickly, strained, and stored in an airtight container in the refrigerator for up to 3–4 days or frozen for about 3 months; a layer of fat protects against oxidation and can be removed before serving.
