Description
Raw beets intended for roasting have a hard, round bulb with deep burgundy or purple flesh and a fresh, earthy sweetness that intensifies and slightly caramelizes during roasting. The skin is thin and can be peeled after roasting, revealing a juicy, uniform color and delicate rings when cut. They are low in calories, rich in fiber, folic acid, vitamin C, and potassium, as well as nitrates and betalains with anti-inflammatory properties that support the circulatory system. This helps with blood pressure, digestion, and detoxification. In the kitchen, roasted beets pair wonderfully with goat cheese, nuts, grains, and citrus-based dressings, making them suitable for salads, soups, tarts, and as a standalone side dish. For storage, it is best to keep raw beets without greens in the refrigerator in a perforated bag or container, chilled and dry, which will keep them fresh for several weeks; before roasting, wash them, trim the tails, and optionally wrap them in foil.
