Description
Brown sugar (light muscovado) is a moist, finely granulated sugar with a soft texture and light brown color, featuring a distinct caramel-molasses flavor and a subtle, slightly toffee-like bitterness. Due to its molasses content, it has a deeper, more complex aroma than white sugar, which gives baked goods and sauces a more "full" flavor profile. Nutritionally, it is dominated by sucrose, providing calories similar to other sugars, but contains trace amounts of minerals such as calcium, magnesium, potassium, and iron; however, it does not replace a balanced diet. It works great in baking cookies, cakes, brownies, caramel sauces, marinades, and beverages, where it enriches flavor and texture. Store in an airtight container in a cool, dry place to prevent drying out or clumping; to soften hardened sugar, simply place a piece of apple or a slice of bread for a few hours.
