Description
Cherry sugar (for filling) is usually finely granulated white table sugar, sometimes mixed with pectin or citric acid for quicker gelling and balancing acidity. It has a clean, distinctly sweet taste that enhances and balances the natural tartness and aroma of cherries, giving the filling a smooth, glossy consistency. Nutritionally, it is mainly a source of sucrose and provides quickly absorbable energy (about 4 kcal/g), while it does not contain significant amounts of vitamins or minerals; when consumed in moderation, it can be part of a balanced diet, but excess sugar carries the risk of weight gain and affects metabolism. It is most commonly used in fillings for cakes, dumplings, knedli, jams, and compotes, as well as an addition to glazes and fruit sauces. Store in a sealed, dry container in a cool place, away from moisture to prevent clumping.
