Description
Demerara brown sugar is an unrefined sugar with large, golden crystals and a pleasant, slightly caramel aroma with a hint of molasses. Its flavor is fuller than that of white sugar, with a subtle sweetness and a touch of toffee, and its texture provides a nice crunch and caramelizes beautifully. Nutritionally, demerara is primarily sucrose, providing calories similar to other sugars, but it contains trace amounts of minerals such as potassium, calcium, iron, and magnesium, due to its lower degree of refinement; health benefits are limited and mainly consist of a flavor alternative when consumed in moderation. In the kitchen, it works well in coffee and tea, for sweetening desserts, sprinkling on baked goods, caramelizing fruits, in marinades and glazes, and as a crunchy addition to muesli. Store in an airtight container in a cool, dry, and dark place to avoid moisture and clumping; if necessary, crush or sift.
