Vanilla extract (optional)
Description
Vanilla extract is a dark brown, aromatic liquid with a thicker consistency and an intense, sweet-floral scent with creamy and woody notes; in its pure form, its aroma is more complex than synthetic vanillin flavors. Nutritionally, the extract provides a minimal number of calories in typical servings (teaspoon), contains small amounts of compounds with antioxidant properties (including vanillin), and is relatively neutral for health, although commercial alcohol-based extracts contain ethanol. In the kitchen, it works as a versatile addition to baked goods, creams, puddings, ice creams, sauces, beverages, and cocktails, enhancing sweet and delicate flavors; it also pairs well with some savory dishes, such as fish sauces or marinades. Store the extract in a tightly sealed bottle, in a cool and dark place away from heat sources; it does not require refrigeration, but when well-sealed, it retains its aroma for several years.
