Capers
Description
Capers are small flower buds of the caper bush, usually pickled in brine or vinegar, with a greenish or brownish hue and a firm, juicy flesh. The flavor is intensely salty-sour with a delicate floral-herb note and a slightly spicy aftertaste, which adds a distinct freshness and aroma to dishes. Nutritionally, capers are low in calories, are a source of vitamin K, small amounts of B vitamins, and minerals, as well as antioxidants (flavonoids). However, it is important to note the high sodium content in the brine, so individuals on a low-sodium diet should consume them sparingly. In the kitchen, capers pair wonderfully with fish, seafood, poultry, sauces (e.g., piccata), salads, pasta, and tapenade, where they enhance flavor and balance richness. Once opened, store capers in the refrigerator submerged in the original brine or oil; if they are salted, rinse them before use and soak if necessary to reduce saltiness.
