Description
Semolina is fine, light grains with a silky texture when cooked and a delicate, slightly sweet, neutral flavor that easily combines with other ingredients. It resembles very fine groats of a creamy color and forms a smooth, creamy mass when cooked. Nutritionally, semolina mainly provides carbohydrates for quickly absorbable energy, has a moderate protein content, and low fat content; it is often enriched with B vitamins and iron. It is easily digestible, recommended for children, the elderly, and convalescents, but it contains gluten, so it is not suitable for those with celiac disease. In the kitchen, it is used for porridge, puddings, cream soups, baked goods, and as a thickener for sauces; it pairs well with milk, fruits, and spices.
