Parsley root
Description
Parsley root has a creamy-white, firm tuber with a slightly sweet, spicy flavor and a hint of leaf parsley. Externally, it resembles celery root, but it is slimmer and more aromatic, and when cooked, it takes on a delicate, slightly nutty sweetness. It is a good source of vitamin C, B vitamins, vitamin K, potassium, and fiber, and contains flavonoids and antioxidants that support digestion, water-electrolyte balance, and overall immunity. In the kitchen, parsley root works well in soups, broths, purees, bakes, and as an ingredient in vegetable mixes; it pairs excellently with meat, fish, other root vegetables, and fresh herbs. Store it in the refrigerator wrapped in damp paper in a perforated bag or container, in a cool, humid place, which extends its freshness for several weeks; it can also be peeled, blanched, and frozen.
