Description
Fresh mint leaves have an intense, cooling aroma with a distinct hint of menthol; they are light to dark green, with finely serrated edges and a delicate, velvety texture. From a nutritional standpoint, mint is low in calories, providing vitamins A and C as well as antioxidants, and the essential oils contained (mainly menthol) aid digestion, alleviate stomach discomfort, have anti-inflammatory properties, and freshen breath. In the kitchen, mint leaves are suitable for drinks and teas, desserts, salads, sauces and dressings, as well as meat dishes (e.g., lamb), Mediterranean and Asian dishes, and as a garnish. To maintain freshness, store mint wrapped in a damp paper towel in the refrigerator or in a bunch in a glass of water; it can also be frozen in ice cubes, while drying reduces the intensity of the aroma.
