Tomato pasta
Description
Tomato paste is a thick, intensely red concentrate with a concentrated sweet-and-sour flavor, a distinct umami depth, and a smooth consistency. It contains concentrated nutrients typical of tomatoes, primarily lycopene—a powerful antioxidant—as well as vitamins A, C, and potassium, with low fat and calorie content, making it a valuable addition that supports heart health and the immune system. In the kitchen, tomato paste works well as a base for sauces, soups, stews, and braised dishes, enhancing the flavor of pasta sauces, pizzas, marinara sauces, marinades, and dips, as well as serving as a thickener and umami booster. It is best stored in a cool, dark place before opening; after opening, transfer it to an airtight container in the refrigerator, possibly with a thin layer of oil on the surface, and use within a few days or freeze in portions.
