Parsley root
Description
Root parsley is a creamy-white, somewhat spindle-shaped tuber with intensely green leaves, featuring an aroma that combines notes of parsley and celery. The flavor is sweet-nutty, earthy with a slight spicy note, more concentrated than the leaves, which adds depth and freshness to dishes. It is low in calories, rich in fiber, vitamin C, folates, vitamin K, as well as potassium and antioxidants, supporting digestion, the urinary system, the immune system, and vascular health. In the kitchen, it works well in soups, broths, purees, roasting, and stewing, pairing nicely with carrots, celery, onions, creamy sauces, meat, and fish. To maintain freshness, remove the leaves, store unwashed roots in the refrigerator in a perforated bag or wrapped in paper, in a cool, moist place for 1–3 weeks; longer storage in sand or freezing after blanching is also possible.
