Nutritional yeast flakes
Description
Nutritional yeast flakes are flaky, light yellow flakes with a subtly nutty-cheesy, umami flavor that enhances dishes without the use of dairy products. Their texture is dry and easy to crumble, allowing for quick dissolution of flavor in both hot and cold dishes. Nutritionally, they are a source of plant protein, fiber, and B vitamins, and many products are additionally fortified with vitamin B12, making them a valuable component of a vegan diet. The flakes contain low amounts of fat and sodium, and due to their concentration of nutrients, they help increase the nutritional value of meals without adding many calories. In the kitchen, they work well as a topping for salads, popcorn, and pasta, as a thickener and "cheesy" ingredient in sauces, dips, or spreads, as well as a flavor enhancer in soups and casseroles. They should be stored in an airtight container in a cool, dry, and dark place; once opened, it's best to keep them away from moisture and strong odors, which will extend their freshness for several months.
