Description
Ricotta is a delicate, fresh Italian cheese with a creamy-white color and a slightly grainy, moist texture. The taste is subtly sweet, milky with a gentle tang; versions made from whole milk are creamier, while those made from skimmed milk are lighter. Nutritionally, ricotta provides high-quality protein, calcium, and B vitamins, and semi-skimmed versions have a moderate fat and calorie content, making it a good choice for those concerned about muscle mass and bone health. In the kitchen, it works well as a filling for lasagna, ravioli, and cannoli, an ingredient in creamy sauces, an addition to pancakes, salads, or cheesecakes, and also as a spread with herbs and honey. Store in the refrigerator in its original packaging or tightly covered, at a temperature of 0–4°C, and it is best consumed within 5–7 days after opening. Excess whey can be drained, and freezing is not recommended due to changes in texture.
