Description

Goat cheese has a characteristic, slightly tangy and fresh flavor with earthy notes; fresh varieties are soft, creamy, and white, while aged ones become firmer, spicier, and creamy-yellowish. Nutritionally, goat cheese provides high-quality protein, calcium, vitamin A, and saturated and monounsaturated fats; due to its lower lactose content and different lipid profiles, it can be easier to digest than cow's cheese, although individuals with a strong allergy to milk proteins should exercise caution.
