Description
Goat cheese has a characteristic, slightly tangy and fresh flavor with earthy notes; fresh varieties are soft, creamy, and white, while aged ones become firmer, spicier, and creamy-yellowish. Nutritionally, goat cheese provides high-quality protein, calcium, vitamin A, and saturated and monounsaturated fats; due to its lower lactose content and different lipid profiles, it can be easier to digest than cow's cheese, although individuals with a strong allergy to milk proteins should exercise caution. In the kitchen, goat cheese pairs wonderfully with salads, roasted vegetables, tarts, sandwiches, and desserts with honey or fruits; it is excellent for spreading, crumbling, and baking. Store in the refrigerator wrapped in parchment paper or in a container, fresh varieties should be consumed within 1–2 weeks, while aged ones can last longer; before serving, it is advisable to take the cheese out for 20–30 minutes to enhance its aroma.
