Description
Grated lemon zest is an intensely aromatic, bright yellow layer of the fruit, rich in essential oils that provide a fresh, citrus scent and a slightly bitter, vibrant flavor without the white bitterness of the flesh. Visually, the fine, moist shavings or thin strips add color and fragrance to dishes, and the aroma is released immediately upon grating. Nutritionally, the zest contains trace amounts of vitamin C, fiber, flavonoids, and limonene, which exhibit antioxidant and anti-inflammatory properties and promote digestion and cardiovascular health. In the kitchen, grated zest perfectly enhances baked goods, desserts, dressings, marinades, fish, poultry, salads, and cocktails, pairing well with herbs, garlic, or chocolate.
