Orange zest
Description
Orange peel is bright orange, thin, and aromatic; the outer layer (the zest) is full of essential oils with a citrusy, slightly bitter aroma, while the white layer (the albedo) provides a distinct bitterness. It contains vitamin C, fiber, flavonoids, and limonene oil, which contribute to its antioxidant, anti-inflammatory effects, and support digestion and immunity when consumed in moderation. In the kitchen, the peel works well as an aromatic addition to baked goods, desserts, jams, marinades, dressings, beverages, and cocktails, as well as to meat and fish dishes, where it balances richness. Before use, it should be washed and grated or thinly sliced. For storage, it is best to keep whole fruits in the refrigerator in a perforated bag for 1–2 weeks; grated peel can be frozen in portions or dried and stored in an airtight container.
