Slow cooking
Heat the drink over medium heat until it becomes very hot, but do not bring it to a boil. When the first small bubbles start to appear on the surface and intense steam rises from the pot, immediately reduce the heat to the minimum. Cover the pot with a lid, leaving a small gap, and let the drink 'infuse' with the flavors for about 15-20 minutes. Stir occasionally.
Seasoning and serving
After 20 minutes, remove the pot from the heat. Taste the drink and decide how sweet you want it. Add two tablespoons of maple syrup, mix well, and taste again. If needed, add more sweetener.
