Its base is high-quality, cloudy apple juice, which is slowly heated with a bouquet of carefully selected spices: cinnamon sticks, cloves, star anise, and fresh ginger. The unique, slightly forest-like aroma is introduced by fresh rosemary, while slices of juicy orange add a citrusy freshness. The sweetness of honey or maple syrup perfectly balances the spicy notes. The drink has a beautiful, deep amber color and is served hot, garnished with fresh additions, making it not only a feast for the palate but also for the eyes. It is perfect for gatherings with friends, holiday parties, or as a relaxing drink after a long day.

Preparation of ingredients

Start by thoroughly preparing the aromatic ingredients. Wash the orange very carefully under hot, running water, scrubbing its skin with a brush. Dry it with a paper towel. Then, using a sharp knife, slice the entire orange (including the skin) into pieces about 0.5 cm thick. Peel the fresh ginger using a small spoon or vegetable peeler and cut it into thin slices. Also, prepare the remaining spices so they are ready to use.

To wash oranges, you can use a little dish soap and then rinse them thoroughly. It's important to remove wax and pesticides from the skin. A teaspoon works great for peeling ginger, as it fits its irregular shape and minimizes flesh loss.

Combining and heating

In a large pot with a thick bottom, place all the prepared ingredients. Pour in the entire liter of apple juice. Add the chopped orange, ginger slices, cinnamon sticks, cloves, star anise, and two sprigs of fresh rosemary (leave the rest for decoration). Set the pot on a medium heat burner.

Use a pot with a capacity of at least 2 liters to avoid boiling over. A thick bottom prevents the sugars from the juice from burning. At this stage, do not add the maple syrup or honey yet – you will do this at the end, to taste.

Slow cooking

Heat the drink over medium heat until it becomes very hot, but do not bring it to a boil. When the first small bubbles start to appear on the surface and intense steam rises from the pot, immediately reduce the heat to the minimum. Cover the pot with a lid, leaving a small gap, and let the drink 'infuse' with the flavors for about 15-20 minutes. Stir occasionally.

It is crucial that the mulled wine does not boil! Boiling the juice can cause the drink to become cloudy and lose some of its delicate aromas. The correct temperature is around 80-85°C. The drink should gently 'quiver', but not bubble.

Seasoning and serving

After 20 minutes, remove the pot from the heat. Taste the drink and decide how sweet you want it. Add two tablespoons of maple syrup, mix well, and taste again. If needed, add more sweetener. If you are making the adult version, this is the time to add the optional dark rum. Pour it into the pot and gently mix.

Add the sweetener gradually, one tablespoon at a time, and taste after each addition. Different apple juices have varying levels of natural sweetness. Remember to add the alcohol always at the end, after removing the drink from the heat, so it doesn't evaporate.

Final preparation and decoration

Pour the hot drink into mugs or glasses made of thick, heat-resistant glass. You can strain it through a fine sieve for a perfectly clear result, or serve directly from the pot with the spices for a more rustic look. Garnish each serving with a fresh sprig of rosemary. Additionally, for color and flavor, you can toss a few fresh cranberries into each mug. Serve immediately while hot.

If you decide to leave the spices in the mugs, inform your guests to be careful with the cloves. Ceramic mugs or cups with handles are best for serving, as they retain heat well and protect hands from burns.

Serve the mulled wine in transparent heat-resistant glasses with a handle to beautifully showcase its color and ingredients. For each serving, in addition to a sprig of rosemary and cranberries, you can add a fresh slice of orange. For extra crunch, you can sprinkle toasted almond flakes on top of the drink.

If you have leftover mulled wine, wait until it cools completely. Then pour it into a glass jar or bottle and store it in the refrigerator for up to 3 days. Before serving, strain out the spices and heat the drink over low heat, without bringing it to a boil.
