Grated lemon zest
Description
Grated lemon zest consists of bright yellow, fine shavings with an intense, fresh citrus aroma and a slight bitterness that appears only when the white pith is grated too deeply. It looks shiny and moist right after grating, and after a while, it dries slightly, releasing the essential oils responsible for its distinctive scent. In terms of flavor, it adds a bright, tangy note with a hint of sweetness and herbal freshness to dishes. Lemon zest is low in calories, rich in essential oils, flavonoids, and vitamin C, as well as small amounts of fiber, which supports the immune system and has antioxidant properties. In the kitchen, it pairs well with desserts, baked goods, sauces, marinades, dressings, fish and poultry dishes, as well as cocktails and beverages as a decoration and aromatic accent. To preserve its aroma, store it in an airtight container in the refrigerator for a few days or freeze it in portions for longer, avoiding the hard white layer while grating.
