Description
Lemon zest is the thin, intensely yellow outer layer of the fruit, rich in essential oils that give it a fresh, vibrant, citrus aroma with a slight, pleasant bitterness. It appears as finely grated or thin strips of peel, easily releasing flavor even in small amounts, making it a valuable flavor and aromatic addition. Zest provides vitamin C, antioxidants, and phytochemical compounds (e.g., limonene and flavonoids) that support immunity, have anti-inflammatory effects, and combat oxidative stress. In the kitchen, it is used in baked goods, desserts, sauces, marinades, dressings, for fish and seafood, and as a finishing touch for drinks and cocktails, as it enhances flavor and adds freshness.
