Now create a space for the filling. Take a small teaspoon (preferably a tea spoon) and gently scoop out some of the flesh from each half of the banana, creating an elongated indentation. Perform this motion carefully to avoid damaging the skin or the walls of the banana. Transfer the scooped-out flesh to a small bowl – do not throw it away, we will use it for the filling!
Preparation of the Filling
Prepare the fruits. Rinse the strawberries and blueberries thoroughly under running water, then gently dry them with a paper towel. Remove the green stems from the strawberries. Cut the strawberries into small cubes (about 0.5 cm x 0.5 cm) so they can be easily arranged on the boats. Leave the blueberries whole.
In a bowl with the scooped-out banana flesh, use a fork to mash it into a smooth paste. The more thoroughly you do this, the creamier the filling will be. Then add Greek yogurt to the bowl. Mix everything together with a spoon until the ingredients combine into a uniform, smooth cream.
Assembling the Boats and Decoration
Time to assemble! Take one prepared banana boat. Using a butter knife or a small spoon, spread a thin layer of peanut butter on the bottom and sides of the indentation. Try to distribute it evenly.
