Banana Boats are a fantastic, creative snack that contains not a gram of white sugar! All the sweetness comes from naturally ripe bananas, fresh fruits, and optionally a bit of honey or maple syrup. The base of the dessert is a banana, which, when cut and hollowed out, turns into an edible boat-shaped bowl. The inside is filled with velvety, thick Greek yogurt, a layer of peanut butter providing healthy fats and protein, and topped with colorful, juicy fruits. It’s not just a dessert, but also a great fun and an opportunity to cook together with kids, who can decorate their own boats. The dish is light, refreshing, and full of vitamins, perfect for an afternoon snack, a healthy after-school treat, or even as the star of a children’s birthday party.

Preparation of the Base (Banana Boats)

Start by preparing the bananas. Place the banana on a cutting board. Do not peel it! Using a small, sharp knife, cut the banana lengthwise in half, but be careful not to cut through the bottom part of the peel. We want the peel on the bottom to remain intact and hold both halves together, creating a boat shape. Gently open both halves.

Use a cutting board to avoid scratching the countertop. It's best to use bananas that are not too overripe, as their skin is stronger and will hold the boat shape better. If you cut through the skin completely, no worries, just place both halves next to each other on the plate.

Now create a space for the filling. Take a small teaspoon (preferably a tea spoon) and gently scoop out some of the flesh from each half of the banana, creating an elongated indentation. Perform this motion carefully to avoid damaging the skin or the walls of the banana. Transfer the scooped-out flesh to a small bowl – do not throw it away, we will use it for the filling!

A teaspoon with a slightly sharper edge (e.g., for grapefruits) can make the task easier, but a regular teaspoon will be sufficient. Try to leave about 0.5 cm of pulp near the skin to keep the boat stable.

Preparation of the Filling

Prepare the fruits. Rinse the strawberries and blueberries thoroughly under running water, then gently dry them with a paper towel. Remove the green stems from the strawberries. Cut the strawberries into small cubes (about 0.5 cm x 0.5 cm) so they can be easily arranged on the boats. Leave the blueberries whole.

Involve the kids in washing the fruits – it's great fun for them! For cutting strawberries, children can use a safe, plastic knife. Dry fruits hold better in the filling and don't release juice.

In a bowl with the scooped-out banana flesh, use a fork to mash it into a smooth paste. The more thoroughly you do this, the creamier the filling will be. Then add Greek yogurt to the bowl. Mix everything together with a spoon until the ingredients combine into a uniform, smooth cream.

If the banana is very ripe and sweet, the filling will not require additional sweetening. However, if you prefer a sweeter taste, this is the moment to add optional honey or maple syrup, but honey is not recommended for children under 1 year old.

Assembling the Boats and Decoration

Time to assemble! Take one prepared banana boat. Using a butter knife or a small spoon, spread a thin layer of peanut butter on the bottom and sides of the indentation. Try to distribute it evenly.

If the peanut butter is very thick and difficult to spread, you can slightly warm it in the microwave for 10-15 seconds to make it more fluid. This will make the task much easier.

Now, spread the prepared yogurt-banana cream over the layer of peanut butter. Fill each boat to the brim. Use a teaspoon to gently smooth the surface of the cream.

Do not add too much filling so that it does not spill out the sides. It should create an appetizing, slightly bulging mound inside the banana.

The most enjoyable part – decorating! This is the perfect moment to involve the kids. Let them arrange sliced strawberries and whole blueberries on top of the yogurt cream. You can create patterns, faces, or just an artistic mess. The more colorful, the better!

Prepare the fruits in small bowls so that the children can easily grab and arrange them. This exercises their motor skills and stimulates creativity.

Finally, to add texture and flavor, sprinkle the finished boats with optional toppings. Use a pinch of coconut flakes and almond slivers. The dessert is ready to serve immediately!

If you want to enhance the aroma, you can toast the almond flakes and coconut flakes in a dry, heated pan for 1-2 minutes until they are lightly browned and start to smell. Remember to let them cool before sprinkling on the dessert.
