Description

Moist pumpkin cake with an intense dark chocolate glaze — a combination of Polish autumn with a modern twist. It is based on roasted pumpkin, warm spices (cinnamon, ginger, nutmeg), and the addition of oil for a silky texture. The cake is perfect as a dessert for a Halloween party: after baking, we pour over it a glossy ganache and decorate with broken nuts and a sprinkle of powdered sugar, creating a "dark" surface. Flavor: subtle sweetness of pumpkin, warm spices, and dark chocolate. Appearance: a cake with a deep orange-brown interior and a dark, shiny glaze — perfect with a cup of spiced tea or creamy vanilla sauce. The recipe is tailored for beginners, with detailed descriptions of techniques and times.

Preparation steps

Cake

1

Prepare the pumpkin puree. If you are using fresh pumpkin: preheat the oven to 200°C (180°C with fan). Cut the pumpkin in half, scoop out the seeds with a spoon, peel it (if using hokkaido, you can skip peeling), and cut it into cubes about 3–4 cm. Spread it on a baking sheet lined with parchment paper, drizzle with 1 tablespoon of rapeseed oil, and lightly salt. Bake for 30–40 minutes until it is soft enough for a fork to easily pierce the flesh. Remove, let cool for 10–15 minutes, and then blend with an immersion blender or in a food processor until smooth. Weigh out 400 g of puree for the cake.

Ingredients: Pumpkin, Rapeseed oil, Salt
Use a baking tray with edges 2–3 cm high and parchment paper. For the softness test, use a fork: a piece of pumpkin should be completely soft and fall apart under pressure. If you are using canned puree, weigh the appropriate amount and skip the baking.
2

Reduce the oven temperature to 180°C (fan oven 160°C). Prepare a 22–24 cm diameter baking pan: grease the bottom and sides with soft butter and line with baking paper or grease with butter and dust with flour. This will make it easy to remove the cake after baking.

Ingredients: Butter
The best is a springform pan 22–24 cm with a removable bottom. Use a kitchen brush or a pastry brush to spread the butter.
3

In a large bowl, sift the wheat flour and add the baking powder. Add cinnamon (4 g), ground ginger (2 g), grated nutmeg (1 g), and salt (1 g). Mix thoroughly with a whisk to evenly distribute the spices.

Ingredients: Wheat flour, Baking powder, Cinnamon, Ground ginger, Nutmeg, Salt
Use a sieve to sift the flour — it will prevent lumps. A bowl with a capacity of at least 3 liters is convenient for mixing.
4

In a separate bowl, beat the soft butter (80 g from the total 100 g) with the sugar (180 g) until light and fluffy — use a hand mixer or a stand mixer on medium speed for 3–4 minutes. The mixture should become lighter and slightly increase in volume. If you don't have a mixer, vigorously beat with a wooden spoon for about 6–8 minutes.

Ingredients: Butter, Sugar
Use a bowl with a capacity of at least 2 liters. The mixture is ready when lifting the mixer’s beaters, the sugar gently dissolves and the mixture looks creamy.
5

Add the eggs (180 g, or about 3 pieces) one at a time: crack one in, mix for 20–30 seconds until combined, then add the next. After adding all the eggs, add the pumpkin puree (400 g) and rapeseed oil (45 g — 3 tablespoons). Mix on low speed until you achieve a uniform mixture, reducing the risk of breaking the emulsion.

Ingredients: Pumpkin, Rapeseed oil
The eggs should be at room temperature to prevent the mixture from curdling. Add the eggs slowly and mix briefly, just until combined.
6

Combine the wet ingredients with the dry: pour the wet mixture into the bowl with the sifted flour and spices. Use a spatula and gently mix from the bottom to the top for a maximum of 20–30 strokes, until no dry streaks are visible. Do not overmix — excessive kneading will result in a tougher texture.

Ingredients: Wheat flour, Pumpkin
Use a silicone spatula to scrape the dough from the bottom of the bowl. The finished dough will be thick but pourable — check for any dry lumps of flour.
7

Pour the batter into the prepared pan (22–24 cm), and smooth the top with a spatula. Place it in the preheated oven and bake for 45–55 minutes. Check with a toothpick — when inserted in the center, the toothpick should come out with a few moist crumbs, but not with raw batter. If the top browns too quickly, cover the pan with aluminum foil starting from the 30-minute mark.

Ingredients: Butter, Wheat flour, Baking powder, Sugar
Use the middle rack in the oven. Baking time depends on the oven — after 40 minutes, start checking every 5 minutes. The mold should be filled to 2/3 of its height.
8

Remove the cake from the oven and let it cool in the pan for 15 minutes on a wire rack. After 15 minutes, gently transfer the cake to the wire rack and cool completely (about 1 hour). The frosting applied to a cake that is too hot may run and be uneven.

Use a cooling rack to prevent the bottom from becoming soggy. If you need to speed things up, place the rack over a cold surface, but not in the fridge — a sudden temperature change can cause the dough to shrink.

Glaze

9

Prepare the chocolate ganache. Break the dark chocolate (120 g) into small pieces and place it in a bowl. In a small saucepan, heat the 30% cream (100 ml) until just before boiling — small bubbles will appear at the edges, do not let it boil. Remove from heat and immediately pour the hot cream over the chocolate. Wait 60 seconds, then slowly stir from the center in a spiral motion until a smooth, shiny mixture forms. Add the remaining 20 g of butter and stir until melted — this adds shine.

Ingredients: Dark chocolate, Butter
Use a metal or heatproof glass bowl; do not mix too vigorously at first, allow the chocolate to soften from the warm cream. If the ganache is too thick, add 1-2 teaspoons of warm cream.
10

When the ganache is smooth and slightly cooled (5–8 minutes), pour it evenly over the completely cooled cake. Keep the bowl low above the cake and move it slowly so that the glaze drips evenly down the sides. If you want a thicker layer, wait 2–3 minutes and apply another thin layer.

Ingredients: Dark chocolate, Butter
Use a wide spoon or spatula to spread the frosting. On warmer cake, the frosting may run too quickly — make sure the cake is completely cooled.

Decoration

11

Sprinkle the top with broken walnuts (optional 50 g). To achieve a Halloween character, you can shape a template in the form of bats or spiders from powdered sugar (20 g) and gently dust the top through a sieve, creating a contrast on the dark glaze.

Ingredients: Powdered sugar
Toast the nuts in a dry pan for 1–2 minutes until you can smell the aroma — be careful, they burn quickly. If you are adding a sugar stencil, place the cardboard on top and gently sift the powdered sugar.
12

Set the cake aside for 30 minutes to let the glaze thicken slightly. Cut into 8 equal pieces with a sharp knife (you can gently warm the knife in hot water and wipe it before cutting to avoid cutting through the glaze). Serve at room temperature.

Use a long, sharp knife for cutting. Warming the knife makes it easier to cut through the ganache cleanly.

Additions

13

Serve the cake with: sour cream mixed with a bit of vanilla sugar, a scoop of vanilla ice cream, or a cup of strong spiced tea. For Halloween, you can add small sugar decorations or caramel 'spider webs'.

If you want to serve with ice cream, serve immediately. For adults, you can drizzle a piece with caramel liqueur.

Fun Fact

💡

Pumpkin has appeared in European kitchens for centuries: in Poland, pumpkin was used not only for soups and pancakes but also as an ingredient in sweet baked goods. In America, pumpkin baked goods have become a symbol of autumn and holidays, and Halloween popularized the decorative use of pumpkin.

Tips

🍽️ Serving

Serve at room temperature. Clean the knife between cuts for aesthetically pleasing pieces. Serve with sour cream mixed with a bit of honey, vanilla ice cream, or espresso. For a Halloween effect: use cookie cutters (bats, spiders) as stencils when dusting with powdered sugar.

🥡 Storage

Store in the refrigerator covered with plastic wrap or in a container for 3–4 days. Before serving, take it out 30–60 minutes in advance to let the cake reach room temperature. You can freeze cut pieces (without frosting) for up to 2 months — thaw slowly in the refrigerator, and prepare the frosting fresh.
