Nutmeg
Description
Nutmeg is a round, hard seed with a smooth, brown shell and an intense, warm aroma that combines spicy, sweet, and slightly peppery notes. The flavor is strong and aromatic, which is why it is used sparingly, and freshly grated nutmeg releases the most essential oils. It contains oils (including myristicin), phenolic compounds, and antioxidants that support digestion, have anti-inflammatory properties, and provide mild pain relief, although in large doses it can be toxic, so it should be used in moderation. In the kitchen, nutmeg pairs well with béchamel sauces, cream soups, meat dishes, pumpkin and potato dishes, desserts, baked goods, and spiced beverages; it combines wonderfully with cinnamon and cloves. Store whole in an airtight, dark, and cool place; ground nutmeg loses its aroma much faster, so it's best to grate it just before use.
