Prepare simple syrup: in a small saucepan, combine 200 ml of water and 150 g of sugar. Taste the mixture and add 1 pinch of salt, and if you want a more pronounced acidity, season with additional lime juice. If you are using vodka (optional), add 30 ml now and mix thoroughly. If you don't have a machine: pour the mixture into a flat metal container (preferably a baking sheet or dish), place it in the freezer for 30-45 minutes, until the edges start to freeze. Remove and vigorously break up the frozen layer with a fork or whisk, mixing it into the center. Repeat this process every 30-45 minutes for 2-3 hours, until the sorbet is smooth and easy to scoop.

Bagel Crumble

Prepare the crumble: by breaking the bagels into large crumbs by hand or in a food processor, you will get about 140 g of crushed pieces. In a 24 cm skillet, melt 30 g of butter over medium heat, add the crushed bagels and toast for 6-8 minutes, stirring constantly with a wooden spoon, until the crumble is golden and crispy. Finally, add a pinch of salt. If you are using honey (optional), remove the skillet from the heat and quickly mix 20 g of honey with the crumble, spreading it evenly; then spread it on a plate to cool.

Use a large non-stick or cast iron skillet. Stir constantly, as the crumble can burn quickly. If you are adding honey, it becomes sticky — allow it to cool completely before crumbling again.
Assembly and serving

Serving: Take the sorbet out of the freezer 10 minutes before serving to let it soften slightly and make it easier to scoop. Dip an ice cream scoop in hot water for a few seconds, dry it, and form balls of sorbet. Place 2-3 balls of sorbet on a chilled plate or in a small bowl, generously sprinkle with pretzel crumble, and garnish with a small sprig of dill and a bit of fresh lime zest. Serve immediately — the sorbet should be smooth, cold, and slightly soft when scooping.
