Description

A refreshing, creamy green drink made with kefir and kale, featuring a distinct hint of lime and apple. This is a Polish, seasonal variation on a smoothie — it utilizes autumn harvests like kale and apple, providing plenty of vitamins and a good texture thanks to the kefir. The drink is light, slightly tangy, with a pleasant plant bitterness from the kale balanced by the sweetness of the apple and honey (optional). Served in a clear glass with a slice of lime, it takes on a "Halloween" character — the intense green color and lime slice resemble an elixir. Great as a healthy start to the day, a pre/post-workout drink, or a themed beverage for a Halloween party. Easy to prepare at home with popular ingredients available in Polish stores.

Preparation steps

Preparation of ingredients

1

Wash the kale under cold running water. To remove sand and dirt, soak the leaves for a minute in a bowl of water, then drain and dry on a towel. Separate the leaves from the thick stems: hold the leaf with one hand and pull along the stem with the other hand to detach the leaf from the fibrous center.

Ingredients: Kale
Use a large bowl and a strainer for rinsing. A common mistake: blending raw tough stems — they give a fibrous texture. Remove them thoroughly.
2

Wash the apple and cucumber. Cut the apple into quarters, remove the core, and chop into smaller pieces (you don't need to peel it — the skin adds flavor and fiber). Slice the cucumber into rounds or pieces about 2 cm long. Firmly press the lime on the countertop with your hand (this makes it easier to squeeze out the juice) and thinly zest the skin with a grater (optional) — then cut it in half and manually squeeze the juice into a small bowl. If you are using ginger, peel it thinly with a spoon and grate it finely.

Ingredients: Apple, Cucumber, Lime, Ginger
Use a cutting board and a sharp knife. A manual juicer will be useful for squeezing lime. Do not blend the whole hard parts of the apple with the core — remove them.

Blending

3

Pour kefir and water into the blender first (the liquids at the bottom will help with blending), then add the apple pieces, cucumber slices, kale leaves (loosely arranged, not packed), fresh ginger (if using), and finally the lime juice. If you are using honey, add it now. Close the blender and blend on high speed for 45–60 seconds or until the drink is smooth and there are no noticeable kale fibers. If the blender gets stuck, stop and stir with a spoon, then continue blending. For a lower-powered blender, blend a little longer and add 1–2 tablespoons more water if needed.

Ingredients: Kefir, Water, Apple, Cucumber, Kale, Ginger, Honey, Lime
Use a jug blender with a power of at least 500 W; for a hand blender, use a tall container and blend in short pulses. A common mistake: adding leaves to the bottom — it causes air to be sucked in and the blender does not blend. First the liquids, then the leaves.

Seasoning

4

Taste the drink and assess the flavor. If it is too sour — add 5–10 g of honey (if you haven't added it before) and stir again. If the consistency is too thick, add 25 ml of water until you reach the desired fluidity. If the flavor is too mild, add another 10–15 ml of lime juice.

Ingredients: Honey, Water, Lime
Season the taste in small portions — it's easier to add than to subtract. Use a spoon for tasting and a clean cup.

Serving

5

Pour the drink into 4 transparent glasses. Place a slice of lime on the rim of each glass and optionally add a small kale leaf as decoration. For a Halloween party, you can serve the drink in tall glasses with a black straw or in small bottles with labels saying "elixir" — the intense green color will look striking against a dark background.

Ingredients: Lime, Kale
Use a strainer if you want to completely remove the fine fibers. The best glass is a tall cocktail glass with a capacity of ~300 ml. Additionally, you can add dry ice without it coming into contact with the drink for a smoky effect (direct contact with dry ice is dangerous).

Fun Fact

💡

Kale was common in European kitchens as early as the Middle Ages and by the early 20th century, it was a staple in Polish vegetable gardens; in the 19th century, it was considered a vegetable with medicinal properties.

Tips

🍽️ Serving

Serve very chilled or with a few ice cubes. For children, reduce the amount of ginger and lime. For a Halloween party, decorate the glasses with lime slices and use black straws or paper labels with the word "Elixir." Additionally, you can add more honey for a sweeter version.

🥡 Storage

Store in a glass jar in the refrigerator for up to 24 hours — freshly prepared drink loses its vitamin properties after a few hours. Before serving again, shake vigorously, as the drink naturally separates. Do not freeze the drink in a bottle with a cap (it may crack).
