Wash the apples under running water and dry them with a paper towel. Use a peeler to remove the skin thinly (optional) or leave the skin on for texture. Place the apples on a cutting board and cut each one in half lengthwise — you will get 8 halves.

Use a sharp knife and a cutting board. If the apples are small, you can use 6 larger ones instead of 4. Warning: uneven cuts result in uneven grilling.

Remove the seed cavities: using a small spoon or knife, gently scoop out the center of the flesh in each half, leaving about 5–7 mm of the bottom so that the apple retains its shape and does not fall apart while grilling.

Use a teaspoon or a special apple corer. Do not cut too deep — if you hollow it out all the way to the skin, the filling will leak out.

If you're worried about the apples browning, drizzle a little lemon juice on the hollowed-out areas (a few drops). Also, grate a thin layer of lemon zest to use later as a garnish (optional).

Use a fine grater for the zest. Apply lemon juice sparingly — 1/4 of a lemon is enough for 4 apples.

Filling

In a small bowl, combine the blue cheese (crumbled or mashed with a fork) with 2/3 of the honey and 1/2 teaspoon of cinnamon. Mix with a fork until the mixture becomes creamy and smooth — it should be soft, not completely liquid.

Use a wooden spoon or fork. If the cheese is very cold, take it out for 5–10 minutes to make it easier to spread. You can also add more honey if you prefer a sweeter filling.

Preparation for grilling

Preheat the grill (or grill pan) to medium-high heat — it should reach about 200°C. If you are using an oven with a grill function, set the top heating element and preheat to 200–220°C. Grease the cut sides of the apples with melted butter using a kitchen brush.

The best is a grill pan with a diameter of 26–28 cm or a grill with a grate. To melt the butter, use a small saucepan or microwave (10–15 s). The butter will evenly coat the crust and facilitate caramelization.

Grilling

Place the apples cut side down on a hot grill or skillet. Grill for 3–4 minutes until clear grill marks appear and the bottom softens slightly. Turn the apples over and grill for another 3–4 minutes, until softness is noticeable when pressed with a fork (the flesh should be soft but not falling apart).

Use tongs or a wide spatula. Do not move the apples too often — leave them until well-defined grill marks appear. If the grill is smoking, slightly reduce the heat.

Assembly and serving

After removing the apples from the grill, place 1-2 tablespoons of the prepared cheese and honey filling into each half. Sprinkle with chopped walnuts (if using) and add a thin strip of lemon zest for freshness. Drizzle the remaining honey on top and sprinkle with a pinch of cinnamon.

Use a small teaspoon to scoop the filling. You can also add more nuts for crunch. The cheese will slightly melt from the heat of the apple — this is the desired effect.

Serving

Place the halves on plates (2 halves per person). Serve immediately while the filling is still warm and slightly runny. You can add a sprig of fresh mint or a scoop of vanilla ice cream as an option (optional and not included in the ingredients).
