Description

Deep purple, slightly sweet and sour cocktail based on black currants and apple juice, with a pleasant fizz from sparkling water and an optional "dark" touch of vodka. This seasonal drink is perfect for Halloween: the dark color of the currants creates a striking, almost black liquid that pairs well with decorations (bone-shaped straws, rosemary leaves pretending to be brooms). The cocktail combines Polish autumn ingredients (black currants, apple, lemon) and a simple currant syrup that you can make yourself. Serve chilled in tall glasses, with ice and optional vodka for adults. Flavor profile: intense fruity note of currants, rounded sweetness of apple, and fresh acidity of lemon; visually: deep black-purple with shimmering foam and decorations.

Preparation steps

Blackcurrant syrup

1

Prepare the currant syrup. If you are using frozen currants, take them out of the freezer and thaw in a bowl (about 30 minutes) or briefly heat them. In a medium pot with a capacity of 1–1.5 l, add 400 ml of blended currants (if you have whole fruits, blend them and measure out 400 ml). Add 40 g of sugar. Set to low heat and slowly warm the mixture, stirring with a wooden spoon until the sugar completely dissolves (this will take 2–3 minutes).

Ingredients: Black currant, Sugar
Use a heavy-bottomed pot (e.g., stainless steel) with a diameter of 18–20 cm and a wooden spoon for stirring. Do not cook on high heat — currants contain a lot of juice, but too vigorous boiling will scorch the flavor.
2

Cook gently for 6–8 minutes over low heat without covering. Stir every 30–40 seconds. The syrup is ready when the volume has reduced by about 20–25% and starts to shine; a drop on a spoon should slowly drip off and not be watery. Remove from heat and let sit for 5 minutes.

Ingredients: Black currant
The time depends on the intensity of the heat and the moisture of the fruits. Test the density: scoop with a spoon and test on a cold plate — the syrup should not spread out clearly.
3

Strain the hot syrup through a fine sieve into a clean bowl or pitcher, pressing the remaining pulp with a spoon to extract as much juice as possible. Set aside the puree and discard the seeds/larger pieces. Allow the syrup to cool to room temperature, then chill in the refrigerator for 15–20 minutes.

Ingredients: Black currant
Use a fine sieve or cheesecloth; if you want a very clear syrup, strain it several times. Before further use, the syrup must be cool to avoid excessively melting the ice in the cocktail.

4

Prepare the glasses and ingredients. Pour 400 ml of apple juice into a large pitcher, add 40 ml of freshly squeezed lemon juice, and 200 ml of chilled currant syrup (you can add more syrup if you prefer a stronger flavor). If you opt for the alcoholic version, add 120 ml of vodka. Gently stir with a bar spoon for 15–20 seconds to combine the ingredients.

Ingredients: Apple, Lemon, Black currant, Vodka
Use a pitcher with a capacity of at least 1 l and a jigger or a large spoon. Stir gently to avoid losing all the fizziness that will appear later after adding the sparkling water.

Serving

5

Prepare the glasses: if you want a decorated rim, first wipe the rim with half a lemon, then dip it in a plate with 20 g of powdered sugar. In each of the 4 tall glasses, place an equal amount of ice (about 75 g per glass).

Ingredients: Ice, Powdered sugar, Lemon
The best is a tall Collins glass or a cocktail glass with a capacity of 300–350 ml. Use tongs or a spoon to evenly distribute the ice cubes.
6

Pour the mixture from the pitcher evenly into the glasses, leaving about 50 ml of space in each glass. Finally, top off each glass with chilled sparkling water (about 50 ml per glass) just before serving to maintain the fizz. If you added vodka earlier, remember to balance the proportions.

Ingredients: Sparkling water, Apple, Black currant
Pour the sparkling water gently by the spoonful to avoid losing the foam and bubbles effect. If the mixture is too intense, add a little more apple juice or sparkling water.

Decoration

7

For each glass, place a sprig of rosemary as a 'broom' and optionally a thin slice of apple on the rim of the glass. You can also add a small dried plum or a single fresh currant on a toothpick as a menacing accent.

Ingredients: Rosemary, Apple
A sprig of rosemary will add flavor: rub it before placing it in the glass to release the essential oils. If serving for children, skip the vodka.

Fun Fact

💡

Black currant has been popular in Polish cuisine for centuries — in ancient times, thick infusions were made from it and it was used as a dye for sweet and sour dishes. Its intense color is perfect for Halloween decorations.

Tips

🍽️ Serving

Serve well chilled. For a 'smoky' effect, place a bowl of dry ice on the side (dry ice should NOT be placed directly into the drink; only in a separate bowl). You can prepare a non-alcoholic version by replacing the vodka with an additional 50 ml of apple juice and 50 ml of sparkling water.

🥡 Storage

Store the currant syrup in a sealed jar in the refrigerator for up to 5 days. It is best to consume the prepared cocktail immediately; after 24 hours, the carbonation from the water will dissipate and the drink will lose its freshness. The syrup can be frozen in ice cubes and used later as an addition.
