Preparation

Prepare your workspace: a clean cutting board, a sharp kitchen knife, a strainer or colander, paper towels, a small bowl for draining liquids, and a tray or plate for arranging the finished skewers. Take the cheese out of the fridge 10 minutes before cutting so it’s not too hard – this will make it easier to cut evenly.

Use a wide cutting board and a large chef's knife to cut the cheese. If you don't have a colander, drain the olives and gherkins in a sieve or on a piece of paper towel.

Cut the cheese into even cubes. Place the block of cheese on the board with the longer side facing you. First, cut off the small outer strips to create a rectangular block, then slice it into pieces about 1.5 cm thick. Cut each slice into strips about 1.5 cm wide, and then into cubes. Each cube should weigh about 15 g (approximately a 1.5–2 cm cube). For 24 skewers, prepare about 24 cubes (with some extra, we will use 360 g of cheese). Time: about 10 minutes.

Use a sharp, non-porous knife to ensure the cubes are even. If you don't have a scale, a measurement of 1.5–2 cm gives a comparable volume. Cubes of the same size will ensure a nice appearance and easy skewering.

Drain the olives and gherkins: transfer the olives to a strainer, rinse quickly under cold water if they are too salty, then place them on a paper towel and gently dry. Cut the gherkins into slices or quarters depending on their size — slices about 4–6 mm thick will work best. Time: 5–7 minutes.

Make sure the ingredients are dry — excess marinade will make the skewers slippery and difficult to assemble. Use a small, sharp knife to cut the gherkins.

If you are using parsley, rinse it under cold water, dry it in a salad spinner or gently on a paper towel, and chop it finely. If you want to add paprika, prepare a small teaspoon for sprinkling before serving.

The parsley should be very dry, otherwise the leaves will wilt on the skewers. Finely chopping will help distribute the aroma evenly.

Skewering the appetizers: take a stick and skewer the ingredients in the following order: first an olive (piercing its side, not the center, to maintain its shape), then a cube of cheese (piercing halfway up the cube), and finally a slice of gherkin. Leave about 1 cm of the stick free at the end so that the appetizer can be easily picked up. Form all the appetizers in the same way. Aim for a pace of about 15–25 seconds per appetizer, meaning that making 24 appetizers will take 6–10 minutes.

Keep the ingredients close to each other to save time. If the olive is too small, you can add an extra slice of gherkin or round off the sequence: gherkin–cheese–olive. Use a board or a large tray to arrange the finished skewers.

Seasoning

Transfer the finished skewers to a serving platter in a single layer. Drizzle them evenly with olive oil (about 15 g = 1 tablespoon). Then gently sprinkle evenly with black pepper (about 1–2 pinches in total). If using, sprinkle with a little sweet paprika powder and finely chopped parsley. Time: 2–3 minutes.

It's better to pour the oil from a long teaspoon, moving your hand over the platter to distribute it evenly. Don't drizzle too generously — excess oil will collect at the bottom of the tray.

Setting Aside and Serving

After seasoning, set the skewers aside for about 10–15 minutes in a cool place (refrigerator or cool countertop) to allow the ingredients to 'marry' and the oil to gently blend the flavors. Just before serving, arrange the skewers on a decorative platter, optionally adding a few fresh parsley leaves as a garnish. Time: 10–15 minutes of waiting (can be prepared earlier and taken out 10–15 minutes before serving).

Do not keep the skewers in the fridge for longer than 4 hours — the cheese may lose its structure and the pickles may soften. If you are preparing them in advance, drizzle with oil just before serving.

Check the taste of one skewer and if necessary, season with additional pepper or a pinch of salt (be careful, the cheese and olives are already salty). Arrange the skewers in tight, aesthetically pleasing rows on a platter to make them look attractive on the Christmas table. Serve at room temperature or slightly chilled.

Before serving, check if the skewers have any splinters; if so, gently remove them. Additionally, you can add a small basil leaf or a slice of dried plum to the skewer as a flavor variation (optional).

If you prepare them more than a few hours in advance, do not drizzle with oil or add herbs — do this just before serving to avoid losing their crunch and freshness. They are not suitable for reheating — the cheese should be served chilled or at room temperature.
