Description

A refreshing, creamy smoothie that combines the sweetness of spring strawberries with the smooth texture of banana and a slightly tangy aftertaste of buttermilk. It's a quick breakfast drink or an afternoon snack, rich in vitamin C, potassium, and easily digestible protein from dairy. Served chilled in tall glasses, garnished with a mint leaf or a piece of strawberry, it looks impressive and appetizing. The smoothie pairs well with a slice of whole grain bread, muesli, or as a light dessert after lunch. The recipe uses Polish, seasonal strawberries and simple ingredients available in any store.

Preparation steps

Preparing the fruits

1

Wash the strawberries under cold running water in a colander for about 10-15 seconds. After draining, place them on a clean paper towel and gently dry. Remove the green stems with your fingers or cut them just below the green cap with a small knife. Discard any rotten or soft pieces.

Ingredients: Strawberry
Use a sieve/strainer and a paper towel. Do not soak the strawberries for too long, as they will lose their aroma. A small knife or peeler will speed up the removal of the stems.
2

Peel the banana. Cut the banana into slices about 1-1.5 cm thick on a cutting board — this will make blending easier and prevent the fruit from sticking to the blender blade. If the banana is very soft, you can place the slices in the freezer for 5-10 minutes beforehand to make the smoothie thicker.

Ingredients: Banana
Use a cutting board and a sharp knife. If you don't want pieces of peel, make sure you have completely peeled the banana.

Blender assembly

3

Pour buttermilk (250 ml) into the blender. Add sliced banana, then washed and hulled strawberries. If you want to sweeten the drink, add honey (1 tablespoon). If you are using mint, tear the leaves and add them inside — do not add the tough stems.

Ingredients: Buttermilk, Banana, Strawberry, Honey, mint
Order: liquid → banana → strawberry → sweetener → mint. This way, the blades start working in the liquid and do not grind the fruits 'dryly'. Use a measuring cup or spoon to measure the honey.

Mixing

4

Close the blender (make sure the lid is securely attached). Turn on the blender at low speed for 5-7 seconds to combine the ingredients, then increase the speed to medium-high and blend for 25-40 seconds. Stop the blender and check the consistency: the smoothie should be uniform, with no visible pieces of fruit, slightly creamy and smooth.

Ingredients: Buttermilk, Banana, Strawberry
Use a countertop blender or an immersion blender with a tall container. If you are using an immersion blender, blend for about 30-45 seconds, moving the tip evenly among the fruits. If the blender makes noise or struggles, stop and stir with a wooden spoon, then continue blending.

Seasoning and serving

5

Try the smoothie with a spoon. If you want a sweeter taste, add an extra half tablespoon of honey (7.5 g) and blend briefly (5-7 seconds). Pour the smoothie into two tall glasses. Garnish with a single mint leaf and a slice of strawberry on the rim of the glass.

Ingredients: Honey, mint, Strawberry
Use tall glasses for the smoothie. Don't add too much buttermilk - the smoothie should be thick but pourable. If it's too thick, add 1-2 tablespoons of buttermilk and mix.

Cleaning

6

After blending, immediately rinse the blender jar under running water to prevent fruit residue from drying. If you used honey, wash the jar with warm water and a little dish soap. Dry all parts thoroughly before reassembling.

A quick rinse makes later cleaning easier and extends the life of the seals. Use a sponge and avoid sharp tools that can scratch the bowl.

Fun Fact

💡

The smoothie in the form of a fruit cocktail became popular in Europe in the second half of the 20th century; in Poland, the use of seasonal strawberries makes the drink have a short, intense flavor season - the best strawberries are in May and June.

Tips

🍽️ Serving

Serve very chilled, preferably with a thick straw or a spoon. For a heartier version, add 20-30 g of oats before blending or 1 tablespoon of flaxseed. For a lactose-free version, replace buttermilk with plant-based kefir (e.g., oat-based).

🥡 Storage

Smoothie is best consumed immediately. It can be stored in an airtight jar in the fridge for up to 12 hours, but the texture and flavor will lose their freshness. Do not freeze the prepared smoothie — it's better to freeze the banana and strawberries before blending if you want to store the ingredients for longer.
