Preparation of ingredients

Chill the glasses: place 6 tall glasses in the fridge or simply fill them with ice for 5 minutes to make them very cold. In the meantime, prepare the ingredients: squeeze the juice from 6 limes (1 lime per glass) into a measuring container; from one additional lime, cut thin slices for decoration and set aside.

Use a manual juicer or a small electric one. If you don't have a juicer, cut the lime in half and squeeze it by hand over a strainer to remove the seeds.

Portioning mint: separate the mint leaves from the tougher stems, weigh out 36 g of leaves (about 6 g per cup). Do not chop finely; the leaves will retain their aroma better whole.

Use a small knife to trim the stems or fingers. Remove only the thick, woody parts of the stems — thin stems are fine for muddling.

Macerating

To each prepared glass, add: 10 g of white sugar (or 10 g of brown sugar if you are using that variant), the juice of 1 lime (about 60 g), and about 6 g of mint leaves. Make sure the sugar and juice are at the bottom of the glass along with the mint before muddling.

For measuring sugar, use a kitchen scale or a tablespoon and convert to grams. If you are using brown sugar (optional), the drink will gain caramel notes.

Muddling: using a muddler or the end of a wooden spoon, gently crush the mint leaves together with the sugar and lime juice for 20–30 seconds. The goal is to release the essential oils from the mint and dissolve the sugar — do not crush the leaves aggressively to avoid releasing bitter notes from the green parts.

Use a muddler with a soft end or a wooden spoon. Do not crush the leaves too hard or tear them — properly bruised leaves will release their aroma but will not turn dark and shredded.

Mixing

Add rum: pour 50 ml of chilled white rum into each glass (a total of 300 ml for 6 servings). Stir with a wooden spoon for 5–8 seconds to combine the ingredients well.

Use a jigger or a small measuring cup. Stir gently to avoid bruising the mint leaves further.

Add ice and sparkling water: fill the glass with crushed ice to about 90% of its height (about 150 g of ice per glass), then top up with cold sparkling water to the rim. Gently stir 2–3 times with a spoon to combine the bubbles and rum with the macerate.

The best is a tall bar spoon. Do not stir vigorously — 2–3 turns are enough to avoid breaking the mint too much.

Serving

Finishing and decoration: decorate each glass with a slice of lime on the rim and a sprig of mint or a few whole leaves. If you like, you can add an extra teaspoon of sugar on top for a sweeter version.

When arranging the mint, gently place a sprig on top and lightly press it with your hand to release additional aroma. You can also add a slice of lime submerged in the drink for better presentation.

Serve immediately: mojito tastes best fresh, right after preparation, when the ice is still hard and the sparkling water is full of bubbles. Serve with a long straw to mix the drink while sipping.

Serve in chilled, tall glasses with a long straw. For a non-alcoholic version, omit the rum and increase the amount of sparkling water to taste. You can prepare the base: lime juice and sugar dissolved together and store it in the fridge for up to 24 hours, adding the rum just before serving.

Mojito does not store well: it's best to prepare it fresh. If you need to store the ingredients, keep the lime juice in a sealed container in the fridge for up to 24 hours, and the mint wrapped in a damp paper towel for 1-2 days. The finished cocktail loses its bubbles and freshness within 30-60 minutes.
