Place the raspberries in a medium bowl and add the honey. Use a fork or a potato masher and gently mash the fruit for about 30–45 seconds — the goal is to release the juice and aroma, not to crush all the seeds. The mixture should turn a vibrant pink color and smell sweet and honey-like.
Seasoning (optional)
If you want to add a light acidic contrast, squeeze the juice from about 30 g of lemon (that's roughly the juice from 1/3–1/2 lemon) directly into the bowl with the raspberries and mix quickly. The lemon juice will enhance the raspberry flavor and soften the sweetness of the honey.
Blending
Transfer the crushed raspberries with honey (and lemon juice if using) to a blender. Add 400 ml of chilled buttermilk, crushed mint leaves (save a few sprigs for decoration), and half of the prepared ice (about 80 g). Blend on high speed for 30–45 seconds until the mixture is smooth, frothy, and uniform.
Adjusting the consistency and flavor
Try the cocktail with a spoon. If it is too thick, add 30–60 ml of cold water or a few extra ice cubes and blend briefly for 10–15 seconds. If it is not sweet enough, add a teaspoon of honey and mix. If you are using the alcoholic version, add vodka (10 ml per serving) and stir gently.
Smoking (optional)
If you don't want seeds, strain the drink through a fine sieve into a pitcher. Pour slowly and additionally stir the mixture with a spoon over the sieve to extract maximum flavor. After straining, the cocktail will be smooth and uniform.
Serving
