Description

Refreshing raspberry-honey cocktail combining fresh summer raspberries with the gentle tartness of buttermilk and the aroma of mint. This drink is inspired by the traditions of Greater Poland cuisine, where seasonal fruits are paired with local dairy products and honey. The cocktail has a creamy texture, a pleasant pink color, and a distinct honey aftertaste; it perfectly quenches thirst on a hot day and pairs well with grilled dishes, picnics, and garden gatherings. It can be served in lemonade glasses or highball glasses, optionally enhanced with a splash of vodka for an adult version.

Preparation steps

Preparation of ingredients

1

Start by chilling the buttermilk in the refrigerator for at least 30 minutes beforehand. Spread the raspberries on a sieve and gently rinse them with cold water — do this briefly to avoid crushing the fruit. Separate the mint from the stems, tear the leaves, and lightly crush them between your fingers to release the aroma. Prepare ice cubes and measuring cups.

Ingredients: Raspberry, Buttermilk, mint, Ice
Use a jug blender (min. 600 W). If you don't have a blender, use a hand whisk and a hand mixer, but the consistency will be less uniform. You will need a fine mesh strainer and a spoon for straining.

Maceration of raspberries

2

Place the raspberries in a medium bowl and add the honey. Use a fork or a potato masher and gently mash the fruit for about 30–45 seconds — the goal is to release the juice and aroma, not to crush all the seeds. The mixture should turn a vibrant pink color and smell sweet and honey-like.

Ingredients: Raspberry, Honey
Use a wooden spoon or a pestle. Do not crush too hard — excessive mashing will release the bitter taste of the seeds. If you prefer a seedless cocktail, prepare a strainer for draining.

Seasoning (optional)

3

If you want to add a light acidic contrast, squeeze the juice from about 30 g of lemon (that's roughly the juice from 1/3–1/2 lemon) directly into the bowl with the raspberries and mix quickly. The lemon juice will enhance the raspberry flavor and soften the sweetness of the honey.

Ingredients: Lemon
Use a lemon strainer or a manual juicer to avoid seeds. This step is optional — skip it if you prefer a sweeter cocktail.

Blending

4

Transfer the crushed raspberries with honey (and lemon juice if using) to a blender. Add 400 ml of chilled buttermilk, crushed mint leaves (save a few sprigs for decoration), and half of the prepared ice (about 80 g). Blend on high speed for 30–45 seconds until the mixture is smooth, frothy, and uniform.

Ingredients: Raspberry, Buttermilk, mint, Ice, Honey
Use a jug blender; if the blender has a pulse function, start with short pulses, then switch to continuous blending. Do not blend for more than a minute, as the buttermilk will start to heat up and separate. If you are mixing by hand, use a hand mixer for about 40–60 seconds.

Adjusting the consistency and flavor

5

Try the cocktail with a spoon. If it is too thick, add 30–60 ml of cold water or a few extra ice cubes and blend briefly for 10–15 seconds. If it is not sweet enough, add a teaspoon of honey and mix. If you are using the alcoholic version, add vodka (10 ml per serving) and stir gently.

Ingredients: Honey, Vodka
Season gradually — it's easier to add more honey than to remove it. Use a cloth/towel, as the blender may splash a bit while seasoning.

Smoking (optional)

6

If you don't want seeds, strain the drink through a fine sieve into a pitcher. Pour slowly and additionally stir the mixture with a spoon over the sieve to extract maximum flavor. After straining, the cocktail will be smooth and uniform.

Ingredients: Raspberry
Use a fine mesh strainer and a flat-bottomed spoon for pressing. Straining takes about 2–3 minutes, but it removes the seeds, which will be appreciated by those who prefer a silky texture.

Serving

7

Fill four tall glasses 3/4 full with additional ice cubes. Pour the cocktail evenly into the glasses. Garnish each glass with a sprig of fresh mint and one raspberry on the rim. Serve immediately — the cocktail tastes best very cold and fresh.

Ingredients: Ice, mint, Raspberry, Vodka
The best are highball glasses or large lemonade glasses. If you are serving the alcoholic version, measure 10 ml of vodka per serving before pouring the cocktail.

Fun Fact

💡

Greater Poland has long made use of local honeys and fermented dairy products; combining raspberries with buttermilk is a modern twist on the traditional flavors of the region, where fruits were often paired with dairy products in the summer.

Tips

🍽️ Serving

Serve very chilled, with thick straws. For children and non-drinkers, omit the alcohol. You can serve the cocktail in halved chilled glasses (place them in the freezer for 10–15 minutes). Additionally, you can add a slice of lemon on the rim for decoration.

🥡 Storage

The cocktail is best consumed immediately; storing it in the fridge for up to 24 hours is possible, but the drink will lose some of its bubbles and freshness. If you need to store it, seal it tightly in a pitcher and keep it for up to 12 hours. Do not refreeze after thawing.
