Description

Classic Polish vegetable salad in an autumn, Halloween edition: boiled roots (potato, carrot, parsley, celery) and separately boiled beetroot combined with crunchy pickled cucumber, peas, and pieces of apple, plus roasted pumpkin for color and a sweet-spicy aroma. The whole is bound together with a thick dressing of mayonnaise and mustard, seasoned with salt and pepper, finished with dill. Thanks to the separate cooking of the beetroot and the addition of pumpkin, the salad has striking, contrasting colors — red "spots," orange pumpkin cubes, and green accents, which will look great on a Halloween table. Perfect as an appetizer and a side dish to roasted meat or as a standalone snack. Flavors: creamy base, sour notes of cucumber, sweetness of pumpkin and apple, and a slight spiciness of mustard.

Preparation steps

Pumpkin

1

Preheat the oven to 200°C (top-bottom). Wash the pumpkin, cut it in half, scoop out the seeds with a spoon, peel the skin if you are using a variety with hard skin (hokkaido can be baked with the skin). Cut the flesh into cubes about 1–1.5 cm on each side. Place the cubes in a large bowl, drizzle with olive oil, and add 1 pinch of salt. Mix by hand or with a spoon to ensure each piece is lightly coated with oil.

Ingredients: Pumpkin, Olive oil, Salt
Use a baking tray lined with parchment paper. If you don't have olive oil, you can use rapeseed oil. Don't place the pieces too close together — it's better for them to have space, so they caramelize nicely.
2

Spread the pumpkin cubes on a baking sheet in a single layer and bake in a preheated oven for 25–30 minutes. After 15 minutes, turn the pieces with a spatula to ensure even browning. The pumpkin is ready when there is a slight caramelization on the edges, and a fork goes into the flesh with little resistance (soft with a slight firmness).

Ingredients: Pumpkin
Use a large spatula to flip. Do not bake too long — overly soft pumpkin will fall apart in the salad.

Vegetables

3

In a large pot, place the peeled potatoes, carrots, celery, and parsley (cut into larger pieces, about 3–4 cm). Cover with cold water so that the vegetables are submerged by about 2 cm. Add 1 pinch of salt. Heat on high until boiling, then reduce the heat to medium-low and cook for 20–25 minutes, until a fork easily goes into the potatoes and carrots.

Ingredients: Carrot, Celery, Parsley, Salt
Use a pot with a capacity of at least 3 liters. Cold water and gradual heating ensure that the vegetables cook evenly. Check the tenderness with a fork every 5 minutes towards the end.
4

Cook the beetroot separately: wash it and, depending on its size, boil in salted water for 45–60 minutes (smaller ones for 30–40 minutes). You can also wrap the beetroot in foil and bake for 45–60 minutes at 200°C. Check carefully by piercing with a fork — it should go in smoothly.

Beetroot stains everything around — cook it separately and let it cool before peeling (the skin comes off more easily after cooling). Use gloves or wash your hands immediately after working with beetroot.

Eggs

5

Place the eggs in a pot, cover with cold water about 2 cm above the surface of the eggs. Bring to a boil over high heat, then reduce the heat and cook for 9 minutes for a hard yolk. After cooking, transfer the eggs to a bowl of very cold water for 5 minutes to make them easier to peel.

Use a slotted spoon to gently place and remove the eggs. The cold bath prevents the egg white from sticking to the shell, making it easier to peel.

Preparation of ingredients

6

Drain the cooked vegetables and set aside to cool. Peel the potatoes, carrot, celery, parsley, and beetroot. Cut all the vegetables (potato, carrot, celery, parsley, beetroot) and eggs into cubes measuring 5–7 mm on each side. When cutting the beetroot, keep it separate from the other vegetables to avoid staining them. Dice the pickled cucumber and onion finely; cut the apple to the same size as the vegetables.

Ingredients: Carrot, Celery, Parsley, Pickled cucumber, Onion, Apple
Use a sharp knife and a cutting board with a non-slip base. Even, small cubes will ensure a nice texture and aesthetics of the salad. If you don't feel confident, first cut into slices, then into strips, and finally into cubes.

Dressing

7

In a large bowl, combine mayonnaise and mustard. Add salt and pepper (start with a small amount, then adjust to taste). Mix with a fork or whisk until a smooth, uniform dressing forms. Taste and add another pinch of salt or pepper if needed.

Ingredients: Mayonnaise, Mustard, Salt, Black pepper
Use a medium bowl and a small whisk or spoon. Don't add too much mayonnaise at the beginning — it's better to add more if the salad is too dry.

Assembly

8

In a large bowl, transfer the chopped potatoes, carrot, celery, parsley, beetroot, peas, pickled cucumber, onion, apple, and eggs. Add the roasted pumpkin. Drizzle with the prepared dressing. Gently mix with a large spoon or spatula — using an upward motion from the bottom to avoid mashing the potato and pumpkin cubes. Taste and if necessary, season with salt or pepper.

Ingredients: Carrot, Parsley, Celery, peas, Pickled cucumber, Onion, Apple, Pumpkin, Mayonnaise, Mustard, Salt, Black pepper
Gently mix, 2–3 times is enough. If the salad seems too dry, add a tablespoon of mayonnaise. You can also add more mustard for spiciness.

Cooling and Serving

9

Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 1 hour to let the flavors meld. Before serving, sprinkle with chopped dill (optional). Serve the salad chilled, in a large bowl or arrange it in smaller portions on a Halloween platter; the red spots of beet and the orange of pumpkin will create a striking, "dark" appearance.

Ingredients: Dill
It's best to prepare the salad a few hours in advance — the flavors will be more harmonized. If you want the pumpkin to be crunchier, add it just before serving.

Decoration and idea for Halloween

10

To achieve a Halloween effect: arrange the salad on a large platter. Use extra slices of beetroot as "blood spots," and place a few cubes of pumpkin as "eyes." You can serve the salad in a hollowed-out small pumpkin (washed and lined with foil) as a striking bowl. Sprinkle with additional dill or small parsley leaves.

Ingredients: Pumpkin, Dill
To hollow out the pumpkin, use a sharp knife and a scraping spoon. Be careful when cutting - work steadily on a cutting board. Additionally, you can add roasted pumpkin seeds as a topping (optional, not included in the ingredients).

Fun Fact

💡

Vegetable salad is a classic of Polish homes since the mid-20th century; originally inspired by the Russian 'olivier', in Poland it has become a symbol of holiday tables and gatherings. By adding roasted pumpkin and separately cooked beetroot, we achieve an autumn twist perfect for Halloween.

Tips

🍽️ Serving

Serve chilled. For a contrast in textures, add toasted pumpkin seeds or finely chopped walnuts just before serving. You can decorate the plates with a few drops of beet juice spread with a fine brush for a "bloody streaks" effect.

🥡 Storage

Store covered in the refrigerator for up to 3 days. The pumpkin may soften over time — if you plan to store it longer, keep the pumpkin separate and add fresh before serving. Reheating is not recommended — the salad tastes best chilled.
