Description

A simple, quick, and nutritious dessert/breakfast based on cottage cheese with natural honey and crunchy walnuts. The dish has a Polish character — cottage cheese is popular in home cooking, and honey and nuts add a sweet-nutty, rustic finish. Served in a bowl, it looks appetizing thanks to the golden honey and pieces of walnut; it can be served for breakfast, as a dessert with afternoon coffee, or as a light snack. The dish combines the creamy-crumbly texture of the cheese with the sticky sweetness of honey and the crunchiness of the nuts — it can easily be adapted with seasonal fruits, such as strawberries in spring.

Preparation steps

Preparation of ingredients

1

Wash and dry the strawberries (if using). Remove the stems with a small knife and cut the fruit into quarters or slices about 5 mm thick. Measure the honey with 2 tablespoons (30 g) using a regular tablespoon. If the nuts are in shells or larger pieces, chop them into smaller pieces – place the nuts on a cutting board and gently crush them with a knife or use a rolling pin, so that they become pieces about 0.5–1 cm in size.

Ingredients: Strawberry, Honey
Tools: small knife, cutting board, measuring spoon, bowl for ingredients. Be careful when crushing the nuts — do not press too hard on the table to avoid damaging the surface.

Assembly

2

Divide the cottage cheese between two bowls: use 150 g of cheese for one serving (a total of 300 g). Scoop the cheese with a large spoon and place it in the bowl. Gently 'fluff' the cheese with a fork, moving it a few times from the center to the outside — this will give the cheese a creamier, more even texture and prevent it from being dense.

Ingredients: Cottage cheese
Use two ceramic bowls with a diameter of about 12–14 cm or one larger bowl for dividing. Tool: a regular fork or a small spoon. Fluffing takes 10–15 seconds and does not require vigorous mixing — the goal is to loosen the curds.

Additions and finishing touches

3

Count each serving and pour 1 tablespoon of honey (about 15 g) on top of the cheese in each bowl. Then evenly sprinkle the prepared pieces of walnut (about 15 g of walnut per serving). If you are using strawberries, arrange the slices on the side of the cheese or gently mix a few pieces on top. Optionally, sprinkle a pinch of cinnamon on top of one or both servings for a spicy aroma.

Ingredients: Honey, Strawberry, Cinnamon
Tools: honey drizzling spoon (or tablespoon), small teaspoon for sprinkling. Common mistake: pouring honey from a too-hot jar — if the honey has been heated, wait until it cools to room temperature to avoid losing its aroma.

Serving

4

Serve the cheese immediately, decorated with an extra piece of nut and a slice of strawberry. Serve with a slice of rye bread or thinly sliced pumpernickel if you want to add a crunchy element. Before eating, check the taste and add a bit more honey if needed — remember that honey enhances the flavor of the cheese and nuts.

Ingredients: Cottage cheese, Honey, Strawberry
Dish: serve in shallow bowls so that the decorative elements are clearly visible. Common mistake: adding too much honey will make it too sweet — it's better to add less and sweeten to taste.

Storage

5

If there are leftovers, store the unused cheese with toppings in the refrigerator in a closed container for up to 24 hours. Before consuming again, it's best to add fresh honey and nuts just before serving, as honey can soak into the cheese and nuts can lose their crunch.

Ingredients: Cottage cheese, Honey
Tools: airtight plastic or glass container. Do not freeze with additives — freezing will change the texture of the cheese and fruits. If you want to store the ingredients separately, keep the nuts in a dry container outside the refrigerator.

Fun Fact

💡

Cottage cheese (grainy curd) was traditionally consumed for breakfast and dinner in Polish cuisine; combining it with honey and nuts is a quick solution known in rural homes as a nutritious snack for the housewife and children.
