Prepare your workspace: a large cutting board, a sharp knife, a large bowl, a grater, a small bowl for dressing, and a spoon. Remove the outer leaves from the cabbage and cut off the tough core with a knife. Cut the head in half, then into quarters, to make it easier to slice thinly. Slice the cabbage into thin strips — hold the knife at a slight angle and cut with a firm motion to ensure the strips are even.
Description
A light, crunchy coleslaw made from white cabbage with the addition of autumn apples — the perfect side dish for meals served at a Halloween party. This classic Polish salad gains a subtly sweet and sour character thanks to the apple and apple cider vinegar, as well as a creamy note from the sour cream. Visually, it can be served in a bowl with black pumpkin seeds as "spiders" or topped with green dill as "grass." The salad perfectly balances rich roasted meats, sausages, or roasted pumpkin, and it is also served with potatoes and cutlets. It has a fresh, slightly creamy taste with a distinct crunch from the cabbage and sweetness from the apple.

Preparation steps
Preparation of ingredients
Peel the carrot and grate it on a coarse grater directly into a large bowl with the cabbage. Wash the apple, cut it into quarters, remove the seeds, and grate it on a coarse grater next to the carrot. If you don't want to peel the apple, wash it well. Peel the onion and slice it into very thin half-rings (or grate it), then add it to the bowl.
Softening the cabbage
Sprinkle the chopped cabbage evenly with salt (use all 3 g of salt), then massage it with your hands for 2-3 minutes until it starts to soften and release juices. The massage causes the cabbage fibers to break down, making it more tender. If you prefer not to massage, let the cabbage sit with the salt for 10-15 minutes, then squeeze out the excess juice.
Dressing
In a small bowl, mix the 12% cream (120 ml) with apple cider vinegar (15 ml), rapeseed oil (15 g), and sugar (10 g). Whisk vigorously with a fork or whisk for about 30 seconds until a creamy and slightly emulsified dressing forms. Taste the dressing and adjust the acidity/sweetness - add more vinegar if you want a sharper flavor or more sugar for a sweeter version.
Mixing and seasoning
Pour the dressing over the bowl with cabbage, carrot, apple, and onion. Mix thoroughly with a spoon or two for 1-2 minutes to ensure the dressing evenly coats all the ingredients. Season with freshly ground black pepper (2 g) and check the saltiness – if needed, add a little more salt (in increments of 0.5 g).
Flavor adjustment and resting
After mixing, let the salad sit for 5-10 minutes to allow the flavors to meld. If the salad seems too dry, add 1-2 tablespoons (15-30 g) of sour cream or a teaspoon of oil. If it's too sour, add a pinch of sugar.
Serving and decoration
Transfer the salad to a decorative bowl. Evenly sprinkle with pumpkin seeds (30 g) for crunch and chopped dill (if using). For a Halloween effect: arrange the pumpkin seeds in the shape of a spider web or add a few whole seeds as "eye sockets" on a plate with ground black pepper around the edge.
Alternatives and tips
If you want a vegan version, replace the cream with thick plant-based yogurt (soy/oat) or use 2 more tablespoons of oil and 1 tablespoon of mustard. You can also add 30 g of toasted walnuts for more texture. Additionally: if you like spicy accents, add 5 g of finely chopped chili pepper.
Fun Fact
Cabbage and apple salad is a classic of Polish cuisine – a simple combination of sweet apple and sour cabbage has been popular on Polish village tables, where it brought together the fresh harvest of autumn. The addition of apple also helps to soften the taste of raw cabbage.

Tips
Serve in a cool bowl, preferably just after preparation (after 5-10 minutes of resting). It pairs perfectly with roasted duck, ribs, chops, and as a fresh accent to pumpkin dishes. For Halloween, decorate with pumpkin seeds and dill, and use dark dishes for contrast.
Store in an airtight container in the refrigerator for up to 24 hours. The apple may soften and release juice over time — stir again before serving and optionally add fresh apple. Do not freeze the salad.
