Preparing the citrus fruits
Base syrup
In a medium saucepan with a capacity of at least 1 liter, place 400 ml of water, 30 g of honey, grated orange zest, and 2 cinnamon sticks. Heat over medium heat, stirring with a wooden spoon, until the honey is completely dissolved (about 2–3 minutes). When the liquid starts to lightly steam, reduce the heat to low and simmer gently for 3–4 minutes to allow the zest and cinnamon stick to release their aroma — do not let it boil (small bubbles at the edge are OK).
Mixing juices
Pour 200 ml of pomegranate juice and 100 ml of cranberry juice, along with the freshly squeezed orange juice, into the hot but not boiling syrup. Gently raise the temperature until the drink reaches about 70–80°C (it should be hot and steaming, but not boiling). Heat for another 1–2 minutes, stirring with a spoon to combine the drinks.
Seasoning and flavor adjustment
Taste the drink with a teaspoon. If it is too sour, add up to 5 g (about 1/2 tablespoon) of additional honey to taste, dissolving it directly in the hot liquid. If you want a spicier aroma, leave the cinnamon sticks in the drink for an additional minute, but no longer than 5 minutes — too long of maceration can make the drink bitter.
Straining
Place a fine mesh strainer over a jug or a larger bowl and strain the drink to remove the peels and cinnamon sticks. Use a metal strainer or a kitchen cloth/gauze folded in 2 layers to achieve a clear drink. After straining, press the remnants in the strainer with a spoon to recover the maximum amount of liquid.
Serving and Decoration
Pour the hot drink into two transparent mugs or heatproof glasses. In each serving, add a slice of orange (set aside earlier), 1–2 tablespoons of pomegranate seeds (if using), and garnish with a sprig of rosemary. First, rub the rosemary sprig between your fingers over the drink to release the essential oils, then place it in the glass. Serve immediately — the drink is best hot and steaming.
Variations and servings
If you want a cold version: completely cool the drink and place it in the fridge for at least 1 hour, then serve with ice and sparkling water (add 100 ml of sparkling water for 2 servings to lighten the taste). For children or those avoiding honey, you can replace the honey with 30 g of brown sugar (dissolve it during the syrup stage).
