Vegetable broth
Description
Vegetable broth is a clear, golden-amber stock with a delicate, vegetable aroma and a hint of umami; it has a mild, slightly sweet, and fresh flavor that enhances other ingredients without overpowering them. It can be made from carrots, celery, onions, leeks, and herbs, which give it subtle depth and a pleasant scent. As a low-calorie and low-fat base, it provides fluids and soluble nutrients such as potassium, B vitamins, and antioxidants, while commercial versions may contain significant amounts of sodium, so it's worth choosing homemade or low-sodium options. Broth pairs well with soups, risottos, sauces, braised vegetables, and as a base for cooking grains or meat. It can be stored in the refrigerator for 3–4 days in an airtight container or frozen in portions for 2–3 months; it should be cooled thoroughly before refrigeration.
