Description
Peeled cocktail shrimp have a delicate, slightly sweet flavor with a light mineral note and a firm, meaty texture. When raw, they are transparent and grayish, but after cooking, they turn a pink-coral color and curl nicely, making them an aesthetic addition to dishes. They are a source of lean protein with low fat content, providing omega-3 fatty acids, selenium, iodine, and vitamin B12, as well as the natural antioxidant astaxanthin; they promote muscle recovery and metabolic functions, although they contain a moderate amount of cholesterol. They pair perfectly with salads, shrimp cocktails, spreads, and risottos, in fried dishes, or served cold with cocktail sauce. Store them chilled in an airtight container and consume within 1–2 days, and if frozen at −18°C, keep for several months; thaw slowly in the refrigerator and do not refreeze after thawing.
