Description
Young potatoes have a thin, delicate skin and a moist, creamy flesh with a slightly sweet, nutty flavor; they usually come in small, irregular tubers in shades of yellow and red, often with a distinct waxy texture, which makes them less likely to become mushy. They are a good source of complex carbohydrates, vitamin C, potassium, and fiber (especially when eaten with the skin), and they also provide small amounts of B vitamins and minerals; they promote satiety, support blood pressure regulation, and have a low fat content. In the kitchen, young potatoes are great for boiling whole, baking, pan-frying, potato salads, and as an accompaniment to herbs, butter, and lean proteins; they pair well with dill, garlic, and lemon. Store them in a cool, dark, and well-ventilated place, do not wash before storing, use within a few days to two weeks, avoid the refrigerator and storing with onions, and remove any green or sprouting specimens.
