Description
Parmesan (Parmigiano Reggiano) is a hard, grainy cheese with a straw-yellow color, an intense umami flavor with distinct nutty notes and a salty-sweet finish, becoming more intense the longer it ages (usually 12–36 months). It is perfectly suited for grating, shaving, or serving in chunks as a snack. Nutritionally, Parmesan is rich in protein, calcium, and phosphorus, providing fat-soluble vitamins (including vitamin A) and beneficial peptides formed during aging; its low lactose content often makes it better tolerated by those with intolerance. Due to its high fat and salt content, it is advisable to consume it in moderation. In the kitchen, it works well as an addition to pasta, risotto, soups, salads, and sauces, as well as an ingredient in tarts, casseroles, and cheese boards. To preserve its aroma and texture, store Parmesan in the refrigerator wrapped in parchment and foil or in an airtight container, avoiding excessive moisture; the hard rind can be used for cooking.
