Description
Blue cheese is an intense, tangy cheese with a creamy or crumbly texture, featuring characteristic blue-green veins of mold (Penicillium) that give it a sharp, salty, and slightly nutty aroma. It looks impressive as a whole piece or crumbled as an addition, and the flavor can range from mild to very strong depending on the variety and aging. It is a good source of protein, calcium, vitamin A, and B12, as well as fats, and the mold cultures it contains may support gut flora, although it should be consumed in moderation due to its high sodium and saturated fat content. It pairs perfectly with salads, sauces, steaks, burgers, pasta dishes, pizza, and as an accompaniment to fruits and honey. Store it wrapped in cheese paper or parchment in the refrigerator, separate from other products, using it within a few weeks; freezing changes its texture.
