Grated lemon zest
Description
Grated lemon zest is a fine granulated material ranging from bright white to intensely yellow, with a strong, fresh citrus aroma and a slightly bitter aftertaste due to essential oils; when grating, it is advisable to avoid the white layer of the pulp (albedo), which adds too much bitterness. As a source of vitamin C, flavonoids, and volatile oils (mainly limonene), the zest has antioxidant and anti-inflammatory properties and aids digestion while providing very few calories. It pairs well with baked goods, creams and desserts, sauces, marinades, fish dishes, salads, and cocktails, where it enhances flavor without adding salt. To maintain freshness, store grated zest in an airtight container in the refrigerator for up to 5–7 days or portion and freeze (e.g., in ice cube trays with oil) for several months.
