Light soy sauce
Description
Light soy sauce has a clear, light brown color and an intense salty-umami flavor with a subtle hint of fermentation; it adds depth to dishes without overly darkening their color. It is low in calories, provides a small amount of protein and amino acids formed during fermentation, as well as phytonutrients from soy, but contains a significant amount of sodium, so it should be used in moderation. In the kitchen, it is used as a basic seasoning for marinades, sauces, soups, stir-fries, and dips, pairing perfectly with fish, poultry, vegetables, and tofu, and balancing sweet and sour ingredients.
