Green asparagus
Description
Green asparagus consists of firm, long stalks with characteristic, compact tips that have an intense green color, sometimes with a slight purple hue, and a delicate, slightly grassy and nutty flavor. They are low in calories, rich in fiber, folic acid, and vitamins K, C, and A, containing potassium, iron, and antioxidants (including glutathione), which support digestion, heart health, bone health, and proper fetal development, as well as having anti-inflammatory effects and benefiting gut microbiota. In the kitchen, green asparagus is great for grilling, baking, blanching, braising, and quick frying. They pair well with salads, pasta, risotto, eggs, and fish, and combine nicely with olive oil, garlic, lemon, butter, parmesan, or prosciutto. Store them in the refrigerator upright in a jar of water or wrapped in a damp towel in a bag, do not wash before storing, and use within 3–4 days; for longer storage, blanch and freeze.
